ICE CREAM CAKE
This is a basic recipe for ice cream cake. You can use any flavor of ice cream or cake mix you like! Frost with frosting or fudge topping or thinned ice milk or anything!

Steps:
- Prepare cake according to package directions; bake in a 9x13 inch baking dish and cool completely.
- Use ice cream that comes in a rectangular carton. Remove the carton and, using a piece of string or dental floss, cut the ice cream in half lengthwise (long side to long side) and place the two layers side by side on a piece of waxed paper.
- Place the cooled cake over the ice cream. Trim the cake and ice cream so that the edges match.
- Place a board or serving platter over the cake, hold onto the waxed paper and board, and flip the ice cream cake over. Remove the waxed paper and smooth out the seam between the ice cream slabs.
- Cover with waxed paper and freeze until very firm. Decorate as desired.

- Spread strawberry ice cream into plastic wrap-lined 9x5-inch loaf pan; top with layers of 1/4 cup fudge topping, marshmallows and 3/4 cup chopped cookies. Freeze 30 min.
- Cover cookie layer with vanilla ice cream; cover with plastic wrap. Freeze 6 hours or until firm.
- Unmold dessert onto serving platter. Remove and discard plastic wrap. Frost top and sides with COOL WHIP. Sprinkle with remaining chopped cookies; drizzle with remaining fudge topping.

This rich ice cream cake with a buttery crust was another gem from a pot luck at work. Hawaii is known for having great pot lucks & that's where I have found many of my favorite recipes. This tastes great, but is so easy to make! I am told other ice cream & pudding flavors also work well, but I always make this with chocolate. Prep time does not include freezing.

- Combine crushed crackers and margarine& press into a 9 by 13" pan.
- Bake at 350 degrees for 7 to 10 minutes.
- Cool.
- In a large bowl, beat pudding& milk until smooth.
- Add pudding to softened ice cream& beat till smooth.
- Pour over crust& freeze.
- Top with Cool Whip.
- Decorate with chopped nuts or chocolate sprinkles.
- Keep in freezer till ready to serve.
