As a meat and potatoes kind of guy, mashed potatoes is my favorite side dish. I've been making this for years, and it's the main thing I'm asked to make for family gatherings. These mashed potatoes are better than any I've ever found anywhere

Mashed Potatoes image

Steps:

  • Peel, cut up and boil potatoes until tender.
  • Drain water and put potatoes in a mixing bowl.
  • Add margarine, sour cream and milk.
  • Use an electric mixer and mix until desired consistency.
  • The KEY here is to add salt and pepper to taste.
  • You might add anywhere from a teaspoon to several tablespoons of salt, just depending on how much you like salt.
  • Pepper is the same way, although use it more sparingly.
  • Just remember to add a little at a time, until you get it where you like it.
  • Once that is done, I usually put a couple of pats of margarine on top of the finished potatoes to let it melt.
  • Then sprinkle parsley over it.
  • This will make the best mashed potatoes I've ever found anywhere.

  • Boil water.
  • When water starts to boil, put in the potatoes. Take out after 15 or so minutes.
  • Mince the onion.
  • Peel the potatoes.
  • Put the potatoes in a large bowl with the minced onion, garlic salt, ground black pepper, and ground red pepper.
  • Mash the potatoes for 20 to 30 minutes.

  • Put the potatoes in a large saucepan, add enough cold water to just cover and salt generously. Bring to a simmer over medium heat and cook, uncovered, until the potatoes are fork-tender, 45 to 55 minutes.

  • Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.

Steps:

  • Peel potatoes and cut into quarters.
  • Place potatoes into stockpot. Add enough salted water to cover the potatoes by about 1-inch.
  • Cover pot and bring to a boil. Reduce heat and simmer until potatoes are fork tender but not mushy, about 20 to 25 minutes.
  • Drain potatoes in colander. Place potatoes back into stockpot.

It is frozen "cubes" of mashed potatoes, and you can use as little or as much as you need right out of the freezer. Steps:

  • Boil potatoes until tender. Drain water and return potatoes to pan. Add all ingredients and mash with a potato masher. (Do not over-mash, or the potatoes will become rubbery and starchy).
  • Spray 4 to 6 ice cube trays with non-stick cooking spray. Spoon mashed potatoes into each cube mold, then pat down with finger.
  • Cover each tray with a sheet of plastic wrap, using fingers to press the wrap firmly onto the surface of the potatoes. This will prevent the potatoes from drying out in the freezer. Add another layer of plastic wrap over the entire tray and wrap tightly.
  • Freeze the trays overnight. When the potatoes are frozen through, pop them out of the molds and into a freezer zipper bag, and store them in the freezer until you are ready to cook.
  • Microwave Reheating: Take out as many cubes as you need. Place in a microwave-safe bowl. Add about a tablespoon of water and cover with a lid or plastic wrap. Heat on 50% power for 5-6 minutes. Stir. Heat again (if necessary) for 2 more minutes.
  • Stovetop Reheating: Take out as many cubes as you need. Place in a boiler with 1/4 to 1/2 cup water. Heat on medium-low for 15 to 20 minutes, stirring occasionally, until heated through and smooth.
