HOMEMADE NONDAIRY YOGURT

Of all the nondairy milks you could use for yogurt, cashew milk works best, turning pleasantly sour with an underlying sweetness. If you wish to go beyond cashew milk, and use soy milk, coconut milk or your homemade nut milk, our How to Make Yogurt guide can help, but whatever you choose, look for nondairy milk with the fewest possible ingredients, ideally just nuts, grains or pulses, and water. While not strictly necessary, the starch used here makes for a creamy, silky yogurt that's still loose enough to stir. If you prefer a thicker yogurt, add a little more, or try the agar powder variation. Or leave the thickener out entirely for a thin, pourable yogurt that's perfect for smoothies.

Homemade Nondairy Yogurt image

Steps:

  • Place 3/4 cup milk in a small bowl and whisk in starch until smooth.
  • Bring remaining milk to a simmer in a medium pot. Whisk starch into hot milk, then let simmer until mixture thickens, 2 to 3 minutes. It should be very thick, like pudding. (It will thin out after fermentation.) Remove from heat, transfer to a glass jar or ceramic bowl (not a reactive metal bowl), and let cool until it reaches 110 degrees.
  • Stir in starter, cover, and let ferment somewhere warm and draft-free for 12 to 24 hours, until it milk turns sour, to taste. If it separates, simply whisk or shake it back together.
  • Refrigerate for at least 4 hours to set.

  • Gather Your Equipment and Ingredients. Non-dairy milk. Thickener (agar agar flakes or tapioca starch) Probiotics (capsules or powder with live active cultures)
  • Choose a Non-Dairy Milk. For this recipe, I used canned coconut milk, but you can also use any non-dairy milk from nuts, seeds, or grains, or a combination.
  • Add Thickener. While dairy yogurt relies on naturally occurring bacteria to give it a thick and creamy consistency, vegan yogurt needs a little something extra to get the perfect texture.
  • Heat the Milk. Using your saucepan and thermometer, gently heat the milk to a 180 degrees F, stirring constantly. Reduce the heat to low and cook, stirring occasionally, until the thickener is fully dissolved, about 5 minutes.
  • Cool the Milk. It's important to cool the milk to let healthy probiotics thrive. Remove the saucepan from the stove top and stir the milk occasionally, until it reaches 110 to 115 degrees F. To speed up the process, you can place your saucepan in an ice water bath, and continuously stir until it reaches the correct temperature.
  • Add Probiotics. To get all of those health-boosting probiotics found naturally fermenting in dairy yogurt, you'll have to add them in. Luckily, you can easily purchase probiotic capsules or powder at most grocery stores, health foods stores, or online.
  • Add Sugar (Optional) Adding a little bit of sugar, although optional, can help promote the fermentation process and improve flavor. Stir in 3 teaspoons sugar, until dissolved.
  • Let It Set Up. Either transfer the yogurt to sterilized glass jars and cover with a lid or cover the saucepan. Let sit in a warm place, about 110 degrees F, until you reach the desired consistency.
  • Chill Out and Dig In. Your yogurt may still look a little looser than the container you buy at the store, but don't worry. Once it chills in the fridge for 4 to 6 hours, it will set up nicely.
