HOMEMADE VANILLA PUDDING MIX IN A JAR
It's easy to make your own homemade pudding mixes. They cost much less than the commercially made mixes and the staples are in your pantry.

- Combine all the dry ingredients and store in an airtight container. The mix fits in a quart jar.
- Homemade Vanilla Pudding in a jar Add 1/2 cup mix to a saucepan. Add 2 cups milk and stir until blended. Bring to a boil, reduce heat and simmer while stirring constantly until thickened. Remove from heat and add 1/2 teaspoon of vanilla extract. Cool and serve. Variations: Leave out the nutmeg and substitute your choice of extract: Almond, Banana, Lemon, Maple or Pineapple or other flavor that you like. Serving Size : 32
VANILLA PUDDING MIX
As hard as I tried I could not find a recipe for Vanilla Pudding mix that I could use as a base for other puddings or to add to other recipe's that I wanted to make, yet didn't want to buy a bunch of packages of pudding for. After 5 (yes I said 5) attempts I came up with one that was creamy enough, and tasty enough to call good. This can be made ahead...then just add a few ingredients and you have pudding. Great for gifting and camping...Higher in Calories yet low in sodium and potassium.*** NOTE*** for those missing the flavor of eggs or having problems with this setting up properly ... I found I liked it better when I added two egg yolks slightly beaten and put some of the hot mix in whipped it and added to the pudding mix as it cooked. You are right it adds to the flavor.

Steps:
- Combine first 4 ingredients into a large bowl, mixing well with each addition. Pour into a food processor and process until a fine powder.
- At this stage you can put it into a jar with a good seal, label and add a card with the following instructions for gifting, or label it for your own future use.
- Over double boiler, with water to boiling stage, put 1 cup of powdered pudding mix into saucepan, slowly adding milk while you stir (I used a whisk for lighter fluffier pudding) Stir constantly for approximately 10-15 minutes or until pudding comes to thickness of your liking. Remove from double boiler, add vanilla and butter, whisk or stir until throughly blended.
- Pour into individual serving dishes and refrigerate.
- NOTE:.
- Due to DH illness I used reconstituted dry milk for the 2 c milk, this does affect the flavor slightly.

- 2. Homemade Chocolate Pudding mix in a jar To prepare: Add 2/3 cup mix to a saucepan. Add 2 cups milk and stir until blended. Bring to a boil, reduce heat and simmer while stirring constantly until thickened. Cool and serve. After pudding is made, you can put into popsicle containers and freeze for homemade fudge sicles. Or maybe a chocolate pie is more to your liking. Just pour into a graham cracker crust. Let set and serve. Serving Size : 24
HOT COCOA MIX IN A JAR
We take this to Holiday parties and on camping trips. Dress up the jar, and it makes a great Holiday gift.

- In a large bowl, combine powdered milk, chocolate pudding mix, chocolate drink mix powder, creamer, confectioners' sugar, and cocoa. Divide the mixture between two 1 quart jars. Seal, and decorate as desired. These can be stored in a dry area for up to 3 months.
- Attach a tag with the following instructions: Hot Cocoa: Dissolve 1/3 cup cocoa mix in 1 cup boiling water.

- Vanilla Pudding 3/4 cup mix 2 1/4 cups milk In a saucepan combine mix and milk and bring to a boil over medium high heat, stiring constantly. Boil 1 minute, remove fron heat and add 2 tablspoons butter and 1 tablespoon vanilla mix well and put into 5 1/2 cup dessert dishes. Try these other flavors make it lemon pudding by adding lemon extract or orange by adding orange extract Or rum raisin by adding 1 tablespoon rum and 1/4 cup raisins
- If you just want to make it tonight do it like this Vanilla pudding 1/2 cup sugar 1/4 cup cornstarch 1/8 teaspoon salt Then follow directions in #2

- Empty pudding mix into 1/2 pint jelly jar -- add cinnamon and nutmeg. Using a spoon to spread evenly in jar.Add French Vanilla instant creamer.

- Get out a 3 quart saucepan. Combine the sugar and cornstarch. Slowly stir in the milk. I use a whisk to make sure the cornstarch doesn't get lumpy. If the milk is cold, so much the better, (cornstarch dissolves quicker in cold liquids) Heat the pudding over medium heat. Stir constantly,Keep stirring it until it boils.
- Wait a minute, so that it boils for a full minute.
- Next crack your egg into a cereal bowl. Scoop a bit of the hot pudding into the bowl with the egg. Stir the egg up pretty fast (so it doesn't cook in the hot pudding) until it is well mixed. Then put the egg/pudding mixture back into the pot. Whisk it up smooth. Bring the pudding back to a boil and then remove it from the stove. Drop in the butter and the vanilla. Stir until butter melts.
- Pour it into small resealable plastic containers if you want to send it in a lunch box.

- Place 2 cups milk and salt in a saucepan. Sprinkle sugar on milk and do not stir; heat over medium-high. Quickly combine cornstarch with remaining milk; add egg yolks and mix well. Bring to a boil, and then immediately reduce the heat to a simmer and continue whisking until the mixture thickens and coats the back of a spoon (about 3 to 5 minutes). Let sit for at least 5 minutes before serving. Store leftovers in an airtight container in the refrigerator.
