HONEY GRAHAM CRACKERS
Make your own honey graham crackers at home! These are simple to make, and can be used in recipes that call for graham crackers.

- Sift together the whole wheat flour, all-purpose flour, baking powder and baking soda; set aside.
- In a medium bowl, cream together the margarine, brown sugar and honey until light and fluffy. Stir in the sifted ingredients alternating with the milk and vanilla. Cover dough and refrigerate overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Divide the chilled dough iinto quarters. On a well floured surface, roll the dough out one quarter at a time iinto a 5x15 inch rectangle. Divide into rectangles using a knife. Place rectangles ointo ungreased cookie sheets. Mark a line down the center of each one, and prick with a fork. For a cinnamon flavored cracker, sprinkle with a cinnamon sugar mixture before baking.
- Bake for 13 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

- Whisk together first 8 ingredients; cut in butter until crumbly. In another bowl, whisk together honey and water; gradually add to dry ingredients, tossing with a fork until dough holds together when pressed., Divide dough in half. Shape each into a disk; cover and refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to an 8-in. square. Using a knife or fluted pastry wheel, cut each into sixteen 2-in. squares. If desired, prick holes with a fork. Place 1 in. apart on parchment-lined baking sheets. , Bake until edges are light brown, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

- Combine dry ingredients in a large bowl. Set aside.
- In a medium saucepan, warm butter, coconut milk, honey, and molasses just until butter melts; stir to mix. Add coconut extract(or vanilla).
- Pour milk mixture all at once into flour mixture. Using a fork, stir until mixture is gathered into a ball. Turn dough out onto a lightly floured surfaace and knead gently, folding and pressing dough 12 to 15 strokes. Divide dough into smaller pieces; roll each piece between 2 pieces of waxed paper(or parchment paper) to 1/8" thickness.
- Cut with a 2 1/2" round cookie cutter and transfer to an ungreased baking sheet. Bake in a 350*F. oven for 10 minutes.
- Makes about 40 crackers.

- Position the oven rack in the center of the oven. Preheat oven to 400°F To prepare the muffin tins, spray the inside of the cups and the rims around the cups with nonstick spray. If using the paper muffin cups, just put them inside the cups. If using silicon muffin pans, spray as directed, then place them on a baking sheet.
- NOTE: You can also use 1 1/2 cups purchased graham cracker crumbs. If you do this, don't process the crumbs in the food processor, just whisk them into the flour.).
- Break up the graham crackers and place them in the bowl of the food processor fitted with the chopping blade. Process for about 1 minute, stopping to reposition the larger chunks as necessary, until the crackers are ground into crumbs. Transfer the crumbs to a medium bowl and whisk in the flour, baking powder and salt until well mixed. Set aside.
- In a large bowl, whisk the egg until lightly beaten, then whisk in the apple sauce and honey until well blended. Whisk in the milk, melted butter, and vanilla until smooth.
- Stir the flour mixture into the batter using a wooden spoon. Do not overmix--simply moisten the flour, leaving the batter grainy, even with a few lumps.
- Fill the prepared pans three quarters full. Use additional greased tins or small oven-safe, greased ramekins for the leftover batter. Or simply save for a second batch. Bake for 18 minutes, or until the muffins have rounded brown tops, and a toothpick stick in the middle of one comes out clean.
- Set the pan on a wire rack to cool for 10 minutes. Gently tip each muffin to one side to make sure it isn't stuck. If one is, gently rock it back and forth until to release it. Remove the muffins from the pan and cool them for 5 minutes more on the rack before serving. If storing or freezing these muffins, allow to cool completely on the rack. Then package them in airtight containers or freezer proof bags. These muffins will keep up to 24 hours at room temperature or up to one month in the freezer.

Why buy when you can make your own. This recipe came out of Country Home Magazine and I want to keep it safe. My computer crashed and I didn't make a back up so I lost all my saved recipes. I know here it will be kept safe.

- In a small bowl whisk together milk, honey and vanilla, set aside.
- In a large bowl combine all-purpose flour, brown sugar, whole wheat flour, baking soda and salt. Using a pastry blender cut in butter until mixture resembles coarse crumbs. You can you a fork to do this. Add milk mixture and stir until just combined. If necessary, knead dough gently to form a ball. Divide dough into fourths. Wrap each portion in plastic wrap and chill for about 1 hour or until easy to handle. On a lightly floured surface, working with 1 portion at a time, roll each portion to a 10-inch square. Using a fluted pastry wheel, cut each square into sixteen 2 1/2 inch squares. Place on ungreased cookie sheets. Poke tops of cutouts with a fork. Bake in a 350 degree oven for 6 to 8 minutes or until edges are firm. Remove and cool completely on wire racks. Makes 64 crackers.
- To store: Layer crackers between waxed paper in an airtight container. Cover.
- Prep time does not include chill time.

- Preheat oven to 400°F.
- Place cupcake liners in muffin pan and set aside.
- In a medium mixing bowl combine crackers, sugar and baking powder.
- In a separate bowl lightly beat milk, egg whites, honey, and cinnamon.
- Add the milk mixture to the cracker mixture and stir just until moistened.
- Spoon batter into muffin pan and bake for about 15 minutes.
- Let stand 5 minutes; remove from pan.
HONEY GRAHAM CRACKERS WITH WHOLE WHEAT
I posted this in a request of crackers with only whole wheat flour. This recipe comes from a Bosch recipe book called "The Natural Nine Cooking with Whole Grains". I have not tried this recipe, but hope to soon. Enjoy.

Steps:
- Blend tog flour, salt, soda, brown sugar and shortening in Bosch mixing bowl.
- Mix in honey and oil with the shortening mix.
- Add cold water and mix only enough to combine.
- Roll out to 1/8 inch thickness on ungreased cookie sheets.
- Cut into 2 inch squares.
- Prick crackers with fork.
- Bake on the centre rack in a 425 degF oven for 8-10 minutes.
- If the outside row of crackers browns before the center, remove outer crackers from pan and continue baking.
