HONEY OATMEAL BUNS SUBWAY STYLE BY UNCLE BILL
I have been trying to make buns similar to the SUBWAY buns and after checking with several other people and taking their recipes and making some changes, I came up with this recipe that is light, tasty and so good.

Steps:
- In a medium saucepan, combine water, honey and butter.
- Heat over low heat until liquids are warm (120 F to 130 F.) DO NOT BOIL.
- In a large bowl or a bread mixing machine, add 5 cups of flour, cooking oats, salt and yeast; mix to blend.
- Gradually mix in warm liquids and mix until liquids are absorbed.
- Add eggs and mix for about 3 minutes until all ingredients are well mixed together.
- Remove dough onto a lightly floured surface and knead in the remaining 1/2 cup of flour.
- Knead for about 5 minutes until dough is nice and smooth.
- Roll dough into a ball and place in a lightly greased bowl, turning to grease the top.
- Cover and let rise in a warm area until dough is doubled in bulk, about 1 hour.
- Punch dough down and divide into 8 equal pieces.
- Roll dough out into the shape of a log, about 12 inches long and about 1 1/4 inches round.
- Place dough log buns on 2 large cookie sheets lined with parchment paper, (4 on each sheet)and spaced.
- Cover and let rise in a warm area until doubled in size, about 1 hour.
- Preheat oven to 375°F.
- In a small bowl, combine cold water and egg white and whisk until frothy.
- Brush tops of loaves with egg mixture.
- Sprinkle quick cooking oats over the top surface of the loaves.
- Bake in preheated 375 F oven for 20 to 25 minutes or until top is lightly browned and the bread sounds hollow when tapped.
- Cool buns on a wire rack.
- You are now ready to make your favorite Subway sandwich.
- You may also make 2 - 4 1/2 x 8 1/2 inch loaves.
- Bake at 375 F for 35 to 40 minutes or until done.

HOMEMADE HONEY OAT BREAD
This delicious bread is from the blog Bakingdom. It's absolutely delicious (I know, I said delicious already), but it really is! And... you slather the top with honey (raw and local, if you've got it, or agave for vegans), and top it with oats. Sooooo.... delicious! While I haven't tried it with ww or spelt flour yet, I plan to. If you do try it, just know the weight of the flour will be different, so go by cups instead.

- In a large bowl, or the bowl of a standing mixer, combine the flour, oats, yeast, and salt.
- In a small bowl, or two cup (450 ml) measuring cup, warm the milk so that it's hot enough to melt the butter, but not boiling. Add the butter, stirring until melted, then stir in the water and honey.
- Pour the milk mixture into the flour mixture, mixing with a dough hook until it just comes together to form a dough. Knead in the mixer, with the dough hook attachment, for 10 minutes, until the dough is smooth and elastic (if you're making this recipe by hand, the dough will be very sticky at first; flour your hands and work surface generously and be patient). If the dough is still very wet and sticky after 5 minutes of kneading, add more flour, 1 tablespoon at a time, until the dough is barely tacky. If the dough is too dry, add water, 1 teaspoon (5 ml) at a time, to soften it up.
- Place the dough in a lightly oiled bowl, cover, and allow to rise until doubled, about 1/2 to 1 hour.
- Once doubled, place the dough on a clean, dry work surface. If the dough is too sticky, lightly flour the surface before continuing. With your fingers, flatten the dough into a 9 by 12-inch rectangle. Tightly roll the dough, tucking the ends as needed, into a loaf. Place the shaped dough into a 9×5-inch loaf pan, cover with a clean dry towl, and allow to rise until doubled, about 1/2 to 1 hour.
- Preheat oven to 350 degrees (180 C). Place an empty loaf pan on the bottom rack of the oven and bring 2 cups of water to a boil.
- When the loaf is doubled again, brush the top with the warmed honey and sprinkle with the oats.
- Place the bread in the oven and pour the boiling water into the empty loaf pan on the bottom rack of the oven. Bake for 40 to 50 minutes, until the bread is deep golden brown and the internal temperature is about 190 degrees.
- Transfer to a wire cooling rack and allow to cool completely before serving.

Basic white dough is used to make dozens of shaped bread. Although more time-consuming to make then kaisers and other breads that are shaped by machine, the traditional Portuguese papa-secos, shaped by hand, are a labor of love.

- In measuring cup, dissolve sugar in 1/2 cup lukewarm warm.
- Sprinkle in yeast and let stand for 10 minutes.
- In large bowl, blend flour and salt.
- Using fingers, rub in lard until well blended.
- Stir yeast mixture vigorously with fork and stir into flour mixture.
- Gradually mix in remaining 1 1/2 cups luke-warm water to make stiff dough.
- Turn out dough onto lightly floured surface and knead for about 10 minutes, or until smooth and elastic.
- Gather into ball and place in lightly greased bowl, turning to grease all over.
- Cover and let rise in draft-free place for 1 1/2 hours, or until doubled in bulk.
- Punch down dough and divide in eighteen pieces.
- On well-floured board, using palm of hand, lightly flatten pieces into 3-inch rounds.
- place side of hand down center of dough; press firmly without seperating dough.
- Fold sides in to center and pinch ends to form slight points; arrange about 2 inches apart on well-grease baking sheets.
- Dust with flour.
- Cover and let rise in draft-free place for 45 minutes, or until doubled in bulk.
- Bake on sheet at a time on top rack in 500F oven for 12 to 15 minutes, or until buns are well browned and sound hollow when tapped on bottom.
- Transfer to wire racks.

- Preheat oven to 350 degrees F.
- In a mixing bowl, cream margarine, oil, granulated sugar and brown sugar.
- Add eggs, vanilla extract and beat well.
- In a separate mixing bowl, combine flour, salt, cream of tartar and baking soda.
- Stir flour mixture into creamed mixture.
- Stir in grape-nuts cereal, rice krispie cereal, rolled oats, both coconut and chopped pecan nuts; mix well to incorporate.
- Drop by tablespoons on an ungreased baking sheet; flatten slightly with a fork.
- Bake in preheated 350 F oven on lower rack for 5 minutes.
- Move to middle rack and finish baking, about 5 to 8 minutes longer or until lightly browned.
- Remove from baking sheet and cool on wire racks.
