Pecan Butter Balls image

Steps:

  • Sift together into a medium sized bowl the flour, sugar and vanilla. Work in the margarine with a spoon or hands until well blended. Add chopped pecans and mix well.
  • Shape dough into 1 inch balls and put on ungreased pans. Bake in a preheated 325 degree F (165 degrees C) oven for about 25 minutes or until pale brown. When slightly cool roll or shake in confectioners' sugar. Store in an air tight container.

⅓ cup confectioners' sugar for decoration

Pecan-Honey Butter image

Steps:

  • Preheat oven to 350 degrees. Bake pecans in a single layer until ligthly toasted and fragrant, stirring occasionally. This should take about 7 minutes. Use your nose to judge when they are done -- they shouldn't smell burned. Cool and finely chop the pecans. (You can make more toasted pecans than you need for this recipe. The toasted pecans can be used for lots of things!).
  • Stir together 1/2 cup butter, softened; 1/2 cup chopped toasted pecans, and 2 tbsp honey.
  • Store in the refrigerator for up to 1 week, or freeze up to 1 month.

  • Cream butter, add honey slowly and beat well. Stir in flour, salt and vanilla. Add nuts. Form small balls, place on a greased cookie sheet. Bake at 300 for 20-25 minutes.

  • Mix together all ingredients except powdered sugar & roll into balls.
  • Bake 40-45 minutes until brown.
  • Roll in powdered sugar; let cool.
  • Roll in sugar again & serve.
