Steps:

  • In a large sautee pan or wok, heat 1 tbsp sesame oil over high heat. Sautee tempeh until golden. Add rest of sesame oil. Add in vegetables one at a time, heartiest ones first, stirring as you go until all vegetables are cooked. This should only take about five minutes.
  • Remove from heat, stir in hot honey garlic sauce, garnish with sesame seeds and serve.
  • For the sauce, heat sesame oil in a small pan. Sautee onion until translucent. Add garlic and continue to cook. Add in raw honey, stirring to melt. Whisk in tamari, rice vinegar, ginger, cayenne and sea salt as desired. Add in water and simmer. Taste for seasoning, adding more honey and sea salt as needed. Whisk in arrowroot, adding more as needed to thicken into a saucy consistency. Pour over vegetables and tempeh and serve warm.

2 tablespoons sesame oil, divided
8 ounces extra firm tofu, diced
2 -4 cups chopped vegetables (recipe calls for bok choy, carrots, zucchini, and portabello mushrooms)
sesame seeds, for garnishing
1 tablespoon sesame oil
1/2 small onion, diced finely
6 garlic cloves, monced
2 tablespoons honey
1 tablespoon soy sauce
2 tablespoons rice vinegar
1/4 teaspoon ginger powder
1 pinch cayenne
sea salt, to taste
1/4 cup water
1/2 tablespoon cornstarch or 1/2 tablespoon arrowroot, as needed to thicken

HONEY PORK STIR-FRY

A recipe from one of those small community cookbooks that we have modified for our tastes by cutting the amount of meat in half and adding extra veggies! Like any stir-fry, this one is very versatile and you could use almost any veggies that you like. We have also added baby corn and red bell pepper before. *Updated: The review by LARavenscroft reminded me that we usually do 1.5 times or double the amount of sauce, depending on the amount of veggies we are using, so please update accordingly if you feel it needs more sauce.

  • Heat oil in a wok over medium heat. Add chicken and garlic, and season with salt and pepper. Cook and stir until chicken is browned, about 5 minutes. Add honey and 1 tablespoon soy sauce; stir to coat chicken. Transfer chicken to a plate, leaving juices in the wok.
  • Add frozen vegetables, mushrooms, and remaining soy sauce to the wok. Cook and stir over medium heat until vegetables are crisp on the outside and tender on the inside, about 7 minutes.
  • Stir chicken back into the wok and cook until no longer pink in the centers and sauce has reduced, 5 to 10 minutes.
  • Meanwhile, stir water and rice together in a microwave-safe bowl. Cover and cook in the microwave on high until water is fully absorbed, about 5 minutes.
  • Serve chicken and vegetables over hot rice.

  • Drain the tofu. Wrap each block in a double layer of paper towels and pat dry, pressing down on the tofu lightly to squeeze out excess moisture. Cut the tofu into 3/4-inch cubes.
  • In a large nonstick skillet or wok, heat the canola oil over medium-high heat. Once the oil is hot but not smoking, add the tofu (be careful, as the oil will splatter a little bit) and drizzle with 1 tablespoon soy sauce. Sauté, stirring every minute or so until the tofu is nicely colored on all sides and the moisture has cooked off, about 8 to 10 minutes. Don’t feel that you need to stir constantly. Sitting for a while on one side is what will allow the tofu to brown. Add the garlic, roughly two-thirds of the green onion, ginger, chili paste, and the remaining 2 tablespoons soy sauce. Stir and cook until fragrant, about 1 minute.
  • Add several large handfuls of spinach, stirring as you go so that it wilts and you can fit more in the pan. Once the first addition has wilted, continue to add and wilt the spinach by handfuls, until all of the spinach is added. It will seem like a ridiculous amount at first but will cook down considerably. Stir in the sesame seeds. Stir in the sesame oil. Remove from the heat. Sprinkle the reserved green onions over the top. Serve hot, with brown rice, noodles, or whatever you like, along with a few dashes of additional soy sauce and chili paste or flakes to taste.
