PORTUGUESE HONEY BREAD

Steps:
- Put oven rack in middle position and preheat oven to 325°F. Butter loaf pans.
- Bring cranberries, candied fruit, and Port to a simmer in a small saucepan. Remove from heat and set aside, covered.
- Pulse walnuts in a food processor until just coarsely chopped. Add flour, salt, baking soda, and spices and pulse to combine.
- Beat together butter (2 1/2 sticks) and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 4 minutes in a stand mixer or 6 with a handheld. Add eggs 1 at a time, beating well after each addition.
- Stir together yeast and warm water in a small bowl and let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
- Add one third of flour mixture to butter mixture and mix at low speed until combined, then add molasses and mix until incorporated. Add half of remaining flour mixture and mix until combined, then add honey and mix until incorporated. Add yeast mixture and remaining flour mixture and mix until combined, then stir in candied-fruit mixture.
- Divide batter among pans, smoothing tops. (Do not let batter rise.) Bake until a wooden pick or skewer inserted in centers of loaves comes out clean, 50 to 60 minutes. Cool in pans on a rack 10 minutes, then remove loaves from pans and cool completely on rack.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 8x4 inch loaf pans.
- In large mixing bowl combine oil, sugar and eggs, beat well. Stir in pears, pecans and vanilla. In another bowl, combine flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into the pear mixture; mix well. Pour batter into prepared loaf pans
- Bake in preheated oven for 60 minutes, until a toothpick inserted into center of a loaf comes out clean. Allow loaves to cool in pans for 10 minutes before moving to a wire rack to cool completely.

- In a bowl, mix the shredded pears, mashed pear, egg, egg white, water, and vanilla. In a separate bowl, mix the flour, sugar, pudding mix, cinnamon, baking soda, salt, and baking powder. Stir the pear mixture into the flour mixture just until moistened. Transfer to the prepared loaf pan.

- In a separate bowl combine the oil, eggs, sugar, grated pears, pecans, and vanilla. Blend well. Add to well of dry ingredients. Stir until just moistened. Spoon batter into 2 greased and floured 8x5x3 inch loaf pans.

- Preheat oven to 350°F Drain pear halves, reserving two for garnish and reserve the juice. Finely chop remaining pear halves.
- Combine brown sugar, honey, oil, pear syrup, eggs, and zests. Stir in chopped pears and nuts.
- Sift remaining ingredients (flour gets sifted twice I suppose) and add to pear mixture, stirring until just blended. Pour into greased loaf pans.
- Slice reserved pears and arrange on top of batter. Bake for 50-60 minutes or until toothpick inserted in center comes out clean.
- Remove from oven, invert to cooling racks and cool. For best flavor let stand overnight. Store wrapped in foil.
PEAR HONEY

- Preheat oven to 350F (I baked at 325F convection).
- Generously grease two large (9X5-inch) loaf pans--the long pieces of pear make the loaves more susceptible to sticking in the pans and falling apart, so make sure you grease generously. (I lined the bottom and sides with a long piece of greased waxed paper, leaving enough extra at the sides to lift the loaf out of the pan.).
- In a large bowl, combine brown sugar, vegetable oil, molasses, and eggs; mix in salt, baking soda, cinnamon, ginger, cloves, and allspice.
- Stir the pear slices in, coating them evenly; stir in the flour.
- Pour batter into prepared loaf pans.
- Bake for 50-65 minutes (I baked mine right around 60 minutes).
- Allow loaves to cool in pan about ten minutes before removing them and placing them on a wire rack to cool.
- Note: I halved the recipe, making one loaf, and used 1 whole egg and 1 egg white.

HONEY BREAD
This recipe is from an old Time-Life African cookbook. Try it warm, spread with butter and honey. It should be easy to adapt to a bread machine, if you have one that can make a 2-pound loaf.

Steps:
- Put water in a small bowl and sprinkle the yeast over it; let stand 2-3 minutes and stir to dissolve.
- Combine the egg, honey, coriander, cinnamon, cloves and salt in a large bowl and mix well with a whisk or spoon.
- Add the yeast, milk and 4 tablespoons of the melted butter and beat until well blended.
- Stir in the flour gradually, adding only enough to form a soft dough that can be gathered into a soft ball.
- Knead the dough on a lightly floured surface; if the dough is sticky, lightly butter your hands rather than add more flour.
- Knead until smooth and elastic, then shape the dough into a ball and place in a large, lightly buttered bowl, cover with a towel or non-stick foil and place in a warm spot until the dough has doubled in size (if you poke it with your finger, it should not"bounce back").
- Spread the remaining melted butter on the sides and bottom of a 3-quart round baking dish at least 3" deep.
- Punch down the dough and knead it for 2-3 minutes.
- Shape the dough into a round and place in the dish, pressing the dough down so it covers the bottom of the container.
- Return the dough to the warm spot and let it rise until it reaches the top of the pan.
- Preheat the oven to 350º.
- Bake the bread in the middle of the oven 50-60 minutes, or until the top is crusty and golden brown.
- Turn out of the pan and cool on a rack.
