EASY HORSERADISH SAUCE WITH MIXED VEGETABLES

Easy Horseradish Sauce With Mixed Vegetables image

Steps:

  • Cook mixed vegetables according to package directions; drain and chill.
  • Meanwhile, combine mayonnaise or salad dressing, milk, horseradish, dry mustard, and pepper. Stir until smooth. Cover and chill.
  • Just before serving, combine mixed vegetables and mayonnaise mixture.

Broccoli with Horseradish Sauce image

Steps:

  • 1. Combine all ingredients except broccoli; stir well. Chill 3 to 4 hours.
  • 2. Separate broccoli into spears. Cook, covered, in a small amount of boiling water 8 to 10 minutes or until crisp-tender.
  • 3. Arrange in a dish. Top with sauce.

1/4 c mayonnaise
2 Tbsp butter, melted
1 Tbsp prepared horseradish
1 Tbsp grated onion
1/4 tsp salt
1/4 tsp dry mustard
1 pinch red pepper
1 lb broccoli, trimmed

ROASTED VEGETABLES WITH HORSERADISH DRESSING

I got this recipe from my sister, but have changed it to suit us. Great as a side dish for beef, lamb, or oven roasted salmon. Good vegan dish too. You can discard the garlic, or squeeze it over the vegetables as we do.

Roasted Vegetables With Horseradish Dressing image

Steps:

  • Wrap the beetroot together in foil (like a package) and place in a 190c oven for 20 minutes.
  • Place the remaining ingredients (except the chopped parsley) in a baking tray, drizzle with olive oil, and season to taste.
  • Place in the oven with the beeroot parcel and cook for 1 hour more, or until tender.
  • Cool the vegetables slightly, then peel the beetroot and tiny onions-quarter the beetroot.
  • Toss all vegetables together gently, then serve on a platter with the dressing drizzled over, scatter with chopped fresh parsley.
  • Good with beef, lamb or oven roasted salmon.
  • HORSERADISH CREAM:.
  • Combine garlic, horseradish and mustard.
  • Gradually whisk in oil and vinegar.
  • Season to taste.

Steps:

  • In a medium bowl, stir together the sour cream, horseradish and lemon juice. Season with salt, paprika, garlic salt and minced onion. Mix and then chill for about 20 minutes to let the flavors blend before you start dipping.
