SPICY VEGGIE CABBAGE SOUP
Just love this soup. I developed it to use up small quantities of veggies, and we fell in love with the flavors. For a less spicy soup, use regular italian sausage. For more heat, add some cayenne pepper and/or crushed red pepper flakes.

Steps:
- Heat a stock pot over medium heat. Crumble sausage into the pot; cook and stir until completely browned, 5 to 7 minutes.
- Pour chicken broth into the pot; add tomatoes, coleslaw mix, celery, potatoes, carrots, onion, garlic, bay leaves, salt, and pepper. Bring the liquid to a boil, reduce heat to medium low, and simmer until vegetables are tender, 45 minutes to 1 hour. Stir cream into individual servings.

CABBAGE SLAW
This recipe proves that homemade coleslaw doesn't have to mean a lot of fuss. You can make it in a moment's notice and serve it with a variety of foods.

- In a food processor or by hand, coarsely chop the cabbage and carrot. In a small bowl, combine the mayonnaise, milk, vinegar, sugar, salt, pepper and celery seed. Stir into the cabbage mixture. Chill until serving.

Steps:
- Heat the oil in a large soup pot.
- Add the onions and saute over medium heat until golden.
- Add the cabbage, carrots, parsnip or turnip, and celery along with just enough stock or water to cover.
- Bring to a simmer, then simmer gently, covered, until the vegies are nerly tender, about 20-25 minutes.
- Stir in the oats, seasoning mix, dill and vinegar, and simmer for another 10-15 minutes or until the vegies are done.
- Stir in the milk as needed, then season to taste with salt and pepper.
- Simmer just until the soup is heated through Serve if you like, with a small dollopof sour cream or yogurt.

SPICY HOT CABBAGE SOUP
This soup was served in my college student union and was a hit with starving college students as it's big on flavor while using only frugal ingredients. I was never able to wheedle the recipe from the cooks, but this is a very close clone of it. It's a super diet recipe as it has a spicy kick that other cabbage soup recipes don't. I think diets fail more from lack of flavor than from hunger pangs! Also, it's the first soup I think of at the first sign of a cold as this one warms you from the inside out. With a toasted cheese sandwich and a hot cup of tea with honey, it's better than penicillin!

Steps:
- Chop veggies and add to a large soup pot along with tomatoes and juice.
- Add salt or salt substitute, pepper, and oil if desired.
- Add enough water to cover the veggies by an inch or two.
- Bring to a slow boil, then reduce heat to simmer and cook for an hour or until cabbage is very soft and translucent.
- Adjust pepper to desired level of heat. You want a nice "bite" to this.
- Serve in warmed bowls with homeade wheat bread and butter. Great for the sinuses and immune system!

- In a 5-qt. Dutch oven, combine cabbage, garlic and oil; cook over low heat for 3-4 minutes, tossing lightly. Cover and cook for 4-5 minutes or until cabbage is crisp-tender. , Add onions. Combine cornstarch, water, soy sauce and salt. Pour over cabbage; toss lightly. Cook and stir for 2-3 minutes or until mixture thickens. Place in a serving bowl; top with almonds. Serve warm.
