Steps:
- Make the dip by combining the mayonnaise, lemon juice, cumin, oregano and honey and a small bowl, Cover and chill until needed. Before serving, bring to room temperature.
- Preheat the oven to 450.
- Line a baking sheet with parchment paper. Divide and stuff the half peppers with the goat cheese. Wrap each half pepper with half the prosciutto and set on the baking sheet, stuffed side up.
- Drizzle the peppers with olive oil. Roast 15 - 20 minutes or until just tender.
- Arrange the peppers on a serving platter with the dipping sauce in the middle.

I use Anaheim Chillis or Hot Banana Peppers for this recipe, but you can use any pepper of your choice. Be very careful when seeding the peppers. It is important to wear gloves and not touch your face. If you do get pepper burn on your skin, rub olive oil on the affected area. I make these to freeze.

Steps:
- Core hot peppers. Take out as many seeds as possible. Be very careful!
- Mix the rest of the ingredients and stuff peppers.
- Place on a baking sheet and a few tablespoons of olive oil over the peppers.
- Bake at 250 F for 45 minutes. Ready to eat or freeze.

- Remove stem and seeds from cherry peppers and rinse peppers under cold water.
- Cut meat slices into halves or quarters Cut cheese into appropriate sizes for cherry peppers (pieces should be about half the size of pepper cavity) Add a little grated cheese to bottom of pepper Add half slices of salami and prosciutto Stuff cheese into meat so all fits snugly Sprinkle grated cheese on top Salt and pepper to taste Garnish with fresh parsley.
