HOT SAUSAGE LINKS AND BEANS CASSEROLE
Potatoes, beans sausage and cheese, who could ask for more. It's savoury, spicy and slightly sweet all at the same time. One of my DH's favourites and easy to throw together. Delicious!!!

Steps:
- Preheat oven to 350*F (175*C).
- In a medum skillet, heat 1 TBS of the olive oil over medium heat.
- Add the garlic and cook for 30 seconds.
- Stir in the onion, oregano, parsley, salt and peppr.
- Cook for 1 minute and remove from the heat.
- Grease the bottom of an 8X8X2inch baking dish with the remaining TBS olive oil.
- On this layer the cubed cooked potatoes.
- Top the potatoes with the onion mixture.
- On the onion mixture, evenly distribute the sliced hot links.
- Ina small bowl, combine the brown sugar, baked beans and the barbecue sauce.
- Pour this evenly over the sausage.
- Top with the shredded Cheddar Cheese.
- Place in the pre-heated oven for 45 minutes.
- Serves 4.

- In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat one tablespoon olive oil in a skillet over medium heat. Add the garlic, and cook for 30 seconds. Stir in the onion, oregano, parsley, salt, and pepper. Cook for 1 minute, and remove from heat.
- Spread 1 tablespoon olive oil over the bottom of an 8x8 inch glass baking dish. Layer the sliced, cooked potatoes in the dish. Top the potatoes with the onion mixture. Arrange sliced sausage over onions. In a small bowl, stir together the brown sugar, baked beans, and barbecue sauce. Pour evenly over the sausage. Top with shredded Cheddar cheese.
- Bake in preheated oven for 45 minutes. Serve!

Steps:
- Clean the chicken: Remove skin from the legs and fat; soak the chicken for 10 minutes in cold water with lemon or lime juice and a pinch of salt.
- Rinse the chicken and pat dry, on the chicken legs or breasts make 2 one inch light slits on each piece.
- On a lightly greased pan, stir-fry the chicken until lightly dry.
- In a medium saucepan, mix the chicken pieces with, red chili powder, garlic, oil, wine, black pepper and stir-fry for 10 minutes; cover tightly; put it in the fridge for 20 minutes to marinate.
- Combine the marinated chicken with the onions, potatoes, carrots, celery, all kinds of tomatoes, basil, bay leaves and a pinch of salt.
- In a preheat 400 degree oven, cover and bake the chicken for 20 minutes.
- Add the beans; mix well; cover and bake for 20 minutes; uncover and bake for 10 minutes.
- Serve it warm.

SAUSAGE AND BEAN CASSEROLE
This is not your basic pork and beans but a quick version of a classic French dish.

- In a food processor, pulse bread until large crumbs form (you should have about 6 cups); season with salt and pepper. Set aside.
- Preheat oven to 375 degrees. In a 6-quart heavy-bottom saucepan, cook sausage, onions, and garlic, stirring occasionally, until onions are translucent and sausage is starting to brown, 15 to 20 minutes.
- Add tomato paste, broth, wine, thyme, and 2 cups water; bring to a boil. Reduce to a simmer; add beans. Simmer, stirring occasionally, until slightly thickened but still soupy, about 10 minutes.
- Stir in 2 cups of the breadcrumbs. Divide sausage mixture between two 3-quart shallow baking dishes or eight 10-ounce ramekins. Top with remaining breadcrumbs.
- Bake, on a baking sheet, until topping is golden, 30 minutes.

- Heat a Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion and turkey sausage to pan; sauté for 5 minutes or until browned. Add garlic, and sauté for 2 minutes.
