  • Preheat the oven to 375 degrees F.
  • Place the rice into an 8-inch square glass baking dish.
  • Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
  • After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

  • Rinse the rice in a fine-mesh sieve under cold water for 30 seconds. Drain.
  • Combine the rice, salt and 2 cups water in a wide, medium saucepan and bring the water to a boil. Reduce the heat to low, cover and simmer until all liquid is absorbed, about 30 minutes. Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.

This basic preparation is perfect to use anywhere you need unflavored cooked rice -- fried rice, soup, or just to serve with a spicy curry. I try to keep some cooked up in the fridge at all times.

Brown Basmati Rice -- Basic Preparation image

Steps:

  • First, put the rice in a strainer inside a bowl and wash it well. I usually change the water in the bowl at least 3 times. The water doesn't need to run completely clear, but it should not be very cloudy or brownish when the rice is washed. Leave the rice in the strainer to drip out for at least a few minutes.
  • Put the rice and water in a saucepan with a tight-fitting lid and bring just to a boil over high heat. You don't want it to really boil, as soon as you start to see the bubbles, put on the lid and turn the heat down to very, very low (on my electric stove, I put it between "lo" and 1).
  • Resist the temptation to take off the lid and check the rice too much. After about 25 minutes you can check it once and see how much water is left. I do this by sticking a wooden spatula down into the rice and pushing it to the side a little. If there is still water, push the rice back together, put the lid back on, and let it cook a few more minutes. Do not stir or disrupt the rice any more than you have to. It will take about 30 to 35 minutes for it to finish cooking.
  • When all the water is absorbed, there will still be sort of a mushy layer at the bottom of the pot. Take the pot off the heat and leave undisturbed for at least 10 minutes. You can really leave it there as long as you like -- the moisture at the bottom will even out and the finished rice should be slightly al dente with all the grains separate.If there are a few clumps, just break them up with a fork or your fingers before serving or storing.
  • If you plan to use the rice for fried rice, I would recommend refrigerating it for at least 6 hours, but overnight is better, so plan ahead!

Perfect Brown Rice in a Steamer image

Steps:

  • Place 2 c rice in a dish with a cover. Pour enough water in to cover and let sit on the counter for at least 2 hours.
  • Drain in a colendar.
  • Fill steamer with water to the high mark. Place steamer basket on steamer. Put rice in rice bowl with 2 1/2 c clean water.
  • Cover steamer and steam for 65 to 70 minutes Let sit for 10 minutes.
  • Remove rice from steamer. If eating it right away serve as usual with butter and spices.
  • If you are not eating right away put rice back in colendar and rinse with cold water till rice is cooled. Place portions into zip top freezer bags, lay flat and squeeze out air and seal bags. Place in freezer till serving day.
  • To use frozen rice, place bag in fridge to thaw about 12 hrs before you are going to use it. Pour thawed rice into a microwave container with just a sprinkle of water. Cover and vent. Microwave about 2 to 3 mins or till warmed through. Serve as usual.

Friends...I'm baking brown rice these days. For years, I'd made it on the stovetop, as that's how I learned how to cook rice when I lived in the Dominican Republic years ago. Then I discovered the rice cooker. I've only been using my rice cooker for a few months, but I love it. It cooks the rice so beautifully, and the clean up is way simpler than cleaning (and sometimes scrubbing out) the saucepan. But I loaned my rice cooker to my sister and I didn't want to go back to the stovetop. (Not that I won't ever cook rice on the stovetop again!) But...even if I set the timer, I might not get there in time...for it to be perfectly cooked. These early days with a baby makes it difficult to commit to being at any one time...even if the timer is set and the rice should be cooked perfectly. We could be in the middle of a fuss-fest, and diaper change and outfit change, or in the middle of a nursing session. Cooking brown rice on the stovetop is a fine art, and requires a bit of attention towards the end, to make sure you get that perfectly cooked and fluffed brown rice to serve for dinner. How to Bake Brown Rice in the Oven image

Steps:

  • Add 1 1/2 cups raw brown rice to bottom of a 9x13-inch glass baking dish. (Or do 1 cup in an 8x8-inch glass baking dish.).
  • Spread evenly over the bottom of the pan.
  • Pour in liquid at a ratio of 2 1/4 times the amount of rice you used. I generally do water, but if I want a bit more flavor, I will do half water and half chicken or vegetable broth. (2.25*1.5=3.375, or 3 3/8 cup of water for this recipe.).
  • Press down and floating rice with a flat spatula.
  • Once all the rice is at the bottom and no longer floating -- Wrap tightly with foil.
  • Bake at 350°F for 1 hour.
  • Let cool slightly before removing the foil -- there will be lots of steam and you don't want to get a steam burn!
  • Fluff with a fork, season with salt and pepper and serve.
  • And that's how you do it friends!

  • Add your brown rice and water. While the typical rice-to-water ratio for white rice is one part rice to two parts water, brown rice works better if you go with one part rice to two and a half parts water.
