Steps:

  • Salt and pepper both sides of the pork chops.
  • Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
  • Heat the canola oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.
  • Delicious and simple! Serve with smashed new potatoes.

1 teaspoon seasoned salt, plus more for seasoning
1 teaspoon ground black pepper, plus more for seasoning
8 pork breakfast chops
1 cup all-purpose flour
Cayenne pepper
1/2 cup canola oil
1 tablespoon butter
Smashed new potatoes, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the panko, oil, Parmesan, Italian seasoning and 3/4 teaspoon each salt and pepper in a large resealable plastic bag. Put the pork chops in a large bowl and toss to coat with 1 tablespoon water. Place the pork chops in the bag and shake well to coat, pressing the breadcrumb mixture firmly into the meat.
  • Place the pork chops on a wire rack set on a baking sheet and top evenly with any breadcrumbs remaining in the bag. Bake until the breadcrumbs are dark golden and the internal temperature of the chops registers 145 degrees F on an instant-read thermometer (avoid touching bone), 15 to 20 minutes.
  • Serve immediately with lemon wedges if using.

1 1/2 cups panko
5 tablespoons vegetable oil
3 tablespoons grated Parmesan
2 teaspoons dried Italian seasoning
Kosher salt and freshly ground black pepper
Four 3/4-inch bone-in pork chops (about 2 1/4 pounds)
Lemon wedges, for serving, optional

  • For accomplished chefs like Chef Thomas Keller, the most important thing about cooking with any protein is making sure you understand where the protein comes from, and supporting the farmers, fishermen, gardeners, and foragers who produce your ingredients. The better acquainted you are with meat, the more successful you’ll be cooking it. Fat is flavor, so the more marbled the cut, the more flavorful—and more expensive—it tends to be.

  • Bring 1 cup (240 ml) of water to a boil and stir in the salt and flavorings. Pour 1 cup (240 ml) of water into a pot and turn the heat to high. Once the water boils, stir in 3 tablespoons (54 g) of coarse kosher salt or 2 1/2 tablespoons (42 g) of table salt.
  • Turn off the heat and add 2 cups (470 ml) of water. The water in the pot will stop bubbling when you add the extra water. The salt should be completely dissolved and the brine will be at room temperature.
  • Pour the brine over the pork chops. Place 2 to 4 bone-in pork chops (about 1 pound or 453 g each) into a shallow plate or pie pan. Pour the brine over the pork chops so they're covered.
  • Cover and chill the chops for at least 30 minutes. Cover the pan with plastic wrap and place it in the refrigerator. Chill the pork chops for at least 30 minutes or up to 4 hours.
  • Preheat the oven to 400 °F (204 °C) and heat a skillet. When you're almost ready to cook the pork chops, turn on the oven and place a cast-iron skillet in it.
  • Dry and season the pork chops with salt and pepper. Take the brined pork chops out of the refrigerator and take them out of the pan. Pat the chops dry with paper towels and set them on a work surface.
  • Sear the pork chops for 3 minutes over medium-high heat. Use oven mitts to remove the hot skillet from the oven. Set the skillet on the stove and turn the heat to medium-high.
  • Flip the pork chops and bake them for 6 minutes in the oven. Use tongs or a spatula to flip each pork chop over. Turn off the heat and use oven mitts to transfer the skillet to the preheated oven.
  • Ensure the temperature has reached 140 °F (60 °C). Insert an instant-read thermometer into the thickest part of a pork chop. The chop should reach between 140 °F (60 °C) and 145 °F (63 °C) once it's finished cooking.
  • Rest the tender chops for 5 minutes before serving them. Turn off the oven and move the pork chops to a shallow rimmed plate. If there are any juices in the skillet, pour them over the chops.

HOW TO COOK PORK CHOPS WITHOUT DRYING THEM OUT - HUFFPOST

From huffpost.com
  • Buy bone-in pork chops. Do yourself a favor and go to a quality butcher to get your pork chop. You’ll notice a huge difference in the taste and texture of the meat.
  • Add a flavor boost with a simple marinade. A common complaint about pork chops is that they’re bland and tasteless. A quick fix is to marinate them in a simple combination of acid (such as vinegar or lemon juice), oil, salt and aromatics (any of your favorite herbs or spices).
  • Bring the meat to room temperature before cooking. After the pork chops have sat in their refrigerated salty bath, they need about 30 minutes to come to room temperature.
  • Start them on the stove; finish them in the oven. If you want a juicy chop, you have to quickly sear it on the stove and then transfer it to the oven.
  • Add a splash of chicken stock to prevent the meat from drying out in the oven. Before transferring to the oven, add a splash of chicken stock to give an extra layer of protection against drying out.
  • Buy a meat thermometer — it doesn’t have to be expensive. A meat thermometer is truly the only way to know whether the meat is done. Everyone talks about taking the temperature of meat after it’s cooked, but it’s just as important to take the temperature while it’s being cooked.
  • Let it rest. Easy and simple: Let the pork chops rest for at least 10 minutes, covered, before slicing them up. The juices will redistribute back into the meat to keep them flavorful, tender and juicy.

HOW TO MAKE TENDER PORK CHOPS - EPICURIOUS

From epicurious.com
  • Opt for Thick-Cut Bone-In Pork Chops. Thin-cut pork chops won't sear properly in the time it takes to cook them through. So while boneless, thin-cut pork chops are great for dishes like schnitzel or tonkatsu—recipes that call for breading and frying the chop—for a pan-seared chop you'll want to buy something that is at least one-inch-thick (we prefer center-cut rib chops), but no larger than two inches.
  • Skip the Brine, but Season Liberally. Not only is brining unnecessary for making tender pork chops, it can also introduce a lot more water to your meat, which will not improve its texture.
  • Let the Pork Chops Rest. Leave the seasoned meat at room temperature for at least 30 minutes (and up to two hours) to give the seasoning time to work its way into the meat, and to let the meat come to room temperature, which will allow it to cook more evenly.
  • Sear Pork Chops Over Medium-High Heat. Heat a skillet (preferably cast-iron, though stainless steel works too) over a medium-high burner. Our own Anna Stockwell likes to start her pork chops by searing the fat cap, which you can certainly do—other recipes may suggest doing this step last.
  • Baste the Pork Chops. Remove the pan from the heat and toss in a knob of unsalted butter, plus some hearty herbs and spices (rosemary, thyme, bay leaves, and dried chiles are all good bets).
  • Let the Pork Chops Rest, Again. While the pork chop rests, the temperature of the meat will continue to rise as the juices relax and redistribute throughout the chop.
  • Serve. You can choose to serve the chops as is, or to slice away the bone and cut the pork into 1/4- to 1/2-inch slices. If you haven't cooked pork to medium before, you may notice that it's pinker than you remember.

  • Place the pork chops in a microwave-safe dish large enough to hold them with a small amount of space between each.

  • Add any fresh or dried herbs you want to both sides of the pork chops and gently pat the salt, pepper and herbs into the meat.
  • Pour 1/4 cup pork or chicken stock or broth over the pork chops. Place the pork chops in the microwave on high for 15 minutes. Advertisement.
  • Check the internal temperature of the pork chops with an instant read thermometer. For safety purposes, the meat should be at least 160 degrees in the centermost portion of each pork chop.
  • Transfer the pork chops to a large serving platter or individual serving plates, patting them dry with paper towels if any liquid remains. Allow five minutes before slicing the meat to ensure that the pork's natural juices are redistributed.
