Steps:
- Mix dry ingredients together.
- In a separate bowl, mix milk, oil, and eggs.
- Stir into dry ingredients.
- Mix until just blended.
- Don't mix until smooth, batter should be a little lumpy.
- Fold in berries.
- Divide mixture evenly into greased large muffin tins.
- Bake in a preheated 400 degree oven 15-18 minutes or until toothpick comes out clean.
BERRY MUFFINS
This is a recipe from The Muffin Lady cookbook, that I changed a little bit. It makes a delicious, bakery style muffin. I use a frozen berry mix, and the combination is heavenly.

Steps:
- Heat oven to 350 degrees.
- Sift the dry ingredients together.
- Mix in the eggs, oil, butter, milk and vanilla.
- Fold in your choice of berries.
- (I get a blend of frozen berries at my grocery store--raspberries, blackberries, strawberries and blueberries. These make a great mixed berry muffin,and they're much more economical than fresh. But use what you have) Pour into lightly greased, standard 12 muffin pan, or large 6 muffin pan.
- (Tip-an ice cream scoop makes easy work of this task, and muffins are the same size.) Bake for 30-40 minutes, start checking at 30 minutes or so.
- Cool in pan on rack for about 5 minutes, then turn on out on rack to cool.
HUBBY'S LOW FAT YUMMY DRIED BERRY MUFFINS
My husband has started creating his own wonderful low-fat recipes and this one is delish! Fabulous for breakfast. He actually uses just shy of 1/4 cup of applesauce, but I couldn't figure out how to note that!

- Preheat your oven to 400 degrees.
- In a bowl mix the milk, the egg, the applesauce, the oil, and the vanilla.
- Mix well and set aside.
- In another bowl combine the flour, wheat germ, baking powder, and salt.
- Add the wet to the dry, mixing just until combined.
- Add the dried berries and just mix until combined.
- Bake at 400 degrees for 20-25 minutes or until brown.

FRUITBURST MUFFINS

Steps:
- Preheat the oven to 200C/gas 6/ fan 180C and very lightly butter a 12-hole muffin tin. Sift the flour and baking powder into a bowl. In another bowl, lightly beat the eggs, then stir in the melted butter, milk and honey. Add to the flour with the remaining ingredients. Combine quickly without overworking (it's fine if there are some lumps left - you want it gloopy rather than fluid). Spoon the mixture into the muffin tin. Bake for 20-25 minutes until well risen and pale golden on top.
- Leave in the tin for a few minutes before turning out. When cool, they'll keep in an airtight tin for two days. (Can be frozen for up to 1 month.)

The original recipe used frozen raspberries, but I had a berry mix of raspberries, cherries, blueberries, and blackberries on my hands. The result was very tasty! I made these for a light brunch on Thanksgiving day.

Steps:
- Preheat oven to 350 degrees.
- Grease 12 muffin cups.
- For crumb topping, combine 1/4 cup flour and brown sugar in a small bowl.
- Cut in 2 tablespoons butter until mixture is crumbly.
- Set aside 1/4 cup flour.
- Combine 1 3/4 cups flour, granulated sugar, baking powder, baking soda, salt and lemon peel in a medium bowl. Combine milk, melted butter and egg. Mix well.
- Toss berries with 1/4 cup flour until coated.
- Add berries to muffin mixture.
- Spoon batter into muffin tins until 3/4 full.
- Sprinkle with crumb topping.
- Bake for 25-30 minutes or until toothpick inserted comes out clean.
- Cool in pan for 2 minutes then remove to wire rack.
- Serve warm or at room temperature.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups.
- In a large bowl, stir together the all-purpose flour, whole wheat flour, sugar, oat bran, quick-cooking oats, wheat germ, baking powder, baking soda and salt.
