IOLA'S SUGAR COOKIES
This recipe is described as a cross between a cookie and tender white cake. It's from "America's Best Lost Recipes" by the editors of Cook's Country magazine (2007). They recommend baking one batch at a time and cooling the cookie sheets completely between batches

- To make cookie dough: In large bowl, whisk flour, baking powder, baking soda and salt. Using electric mixer at medium-high speed, beat together butter and 1/2 cup sugar for 2 minutes or until fluffy. Reduce mixer speed to medium. Add egg and vanilla. Beat until combined. Add flour mixture and buttermilk alternately in 2 batches, beating until incorporated after each addition. Press dough into 4-inch disk. Wrap in plastic wrap. Refrigerate until well chilled, at least 2 hours or up to 24 hours.
- To prepare oven, baking sheet: Adjust oven rack to middle position. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
- To roll cookies: On lightly floured work surface, roll dough out to 1/4-inch-thick circle. Cut into rounds using 2 1/2-inch cookie cutter. Space rounds 1 inch apart on prepared baking sheet. Sprinkle with some remaining sugar.
- To bake cookies: Bake for 12 to 15 minutes or until just golden around edges. Cool cookies on baking sheet for 2 minutes. Transfer to wire rack. Cool completely, about 20 minutes. Gather scraps. Reroll dough. Repeat with remaining dough and sugar.
SUGAR COOKIES

- Cream together the butter, sugar, salt and vanilla seeds in a medium bowl with an electric mixer on medium-high speed for 1 to 2 minutes. (Don't overmix or your cookies will not stay in shape when they bake.) Add the egg and mix just to combine, then add the flour, ginger and cinnamon and mix until it all looks uniform.
- Squidge the mixture into a ball and then pat it down into a disc. Wrap the dough in plastic wrap and chill until firm, in the fridge for about 20 minutes or the freezer for 15 minutes.
- Preheat the oven to 350 degrees F. Line 3 baking sheets with parchment paper.
- Once firm, roll the dough out on a lightly floured surface to about 1/4 inch thick, then cut out your cookies using any cutter you like. You may need to re-roll the dough a couple of times to cut out all your cookies. If the dough gets too soft, put it back in the freezer/fridge to firm up. Put the cut-out cookies in the fridge for 10 minutes to firm up before baking, so they don't spread too much in the oven.
- Bake until the cookies are just turning golden brown, 10 to 12 minutes. Let cool completely on a wire rack before decorating with Royal Icing and your favorite sprinkles.
- Add the egg whites to a bowl and whisk until frothy soft peaks form. Add the confectioners' sugar gradually, mixing until the royal icing is uniform and nice and shiny. Add the lemon juice and whisk a little more to incorporate.

- Whisk together the flour, baking powder and salt in a small bowl.
- Beat the sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes. Beat in the eggs and then the vanilla. Add the flour mixture and beat on medium-low speed until completely incorporated. Scoop out heaping tablespoonfuls of the dough, roll with your hands into balls and refrigerate until firm, about 30 minutes.
- Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Put some sugar in a small bowl. Roll the chilled dough balls in the sugar and arrange on the prepared baking sheets about 2 inches apart.
- Bake until the bottoms and edges are just barely golden and the tops are no longer glossy, 14 to 16 minutes, rotating the baking sheets about halfway through. Let the cookies cool on the sheets for a few minutes, then transfer them to a wire rack to cool completely. The cookies can be stored in an airtight container at room temperature for up to 3 days.

- Make the frosting: in a large bowl, beat the butter with an electric hand mixer until fluffy. Sift in the powdered sugar and mix until incorporated. Add the milk and continue to beat until the frosting is smooth and velvety. Add food coloring, if desired.

- Make the cookie dough: In a large bowl, cream together the butter, sugar, and cream cheese with an electric hand mixer on high speed for about 5 minutes, until fluffy and the sugar is mostly dissolved. Scrape down the bowl as needed to evenly beat the mixture.
- Add the egg, egg yolks, vanilla, and almond extract and mix well, scraping down the sides of the bowl.
- Add the salt, then sift the flour, baking powder, and cream of tartar into the bowl and fold to incorporate some of the flour. Then beat on low speed, just until incorporated and the dough comes together.

If you'd like the frosting to be looser to flood or dip your cookies, add a few tablespoons of water, 1 tablespoon at a time, until it reaches your desired consistency.
