Churer Fleischtorte (Swiss Meat Pie) image

Steps:

  • Preheat the oven to 190° C (375° F - gas 5). Grease a 23 cm pie tin.
  • Roll out two-thirds of the pastry, and use it to line the pie tin.
  • Bake blind for 7-10 minutes.
  • Melt the butter in a frying pan and fry the onion and bacon over a low heat for 3 minutes.
  • Add the meat and fry until lightly browned.
  • Stir in the flour and add the hot beef stock and then the wine.
  • Stir until smooth and add the salt, marjoram and paprika.
  • Simmer for 5 minutes.
  • Allow to cool and spread over the pastry.
  • Roll the remaining pastry into a lid.
  • Brush the edges with beaten egg and place the lid over the pie.
  • Press the edges to seal and prick the lid with a fork in several places.
  • Bake for about 40 minutes until golden brown.

500 g shortcrust pastry (enough for a double crust pie)
30 g butter
1 medium onion, coarsely diced
2 slices middle bacon, coarsely chopped
250 g beef, minced
250 g pork, minced
1 tablespoon flour
60 ml hot beef stock
60 ml red wine
salt, to taste
1/2-3/4 teaspoon marjoram
1 teaspoon paprika

This is a very old recipe from Favorite Recipes of Kentucky and Tennessee. I have used this cookbook more than any I have. It belonged to my Grandmother and is about worn out.

Steps:

  • For Crust:.
  • Combine all crust ingredients and mix well.
  • Pat meat mixture into a greased pie pan.
  • Pinch 1-inch fluting around the edges.
  • For Filling:.
  • Combine the rice, tomato sauce, salt, water and 1/4 cup of the cheese.
  • Spoon mixture into meat shell.
  • Cover with aluminum foil.
  • Bake at 350 degrees fahrenheit for 25 minutes.
  • Uncover and sprinkle top with remaining cheese.
  • Return to oven and bake uncovered 10 to 15 minutes longer.
  • Cut into pie-shaped pieces.

This recipe is from the Pampas Pastry website. It passes the Susan test for a five star recipe - easy, delicious and looks good too! These pies freeze well. Prepare up to the baking stage, then freeze. Cook from frozen on the day they are required. Hope you enjoy your Aussie Meat Pie - maybe enhanced with a glass of Coonawarra red! Aussie Meat Pie image

Steps:

  • Cook onion and meat until meat is well browned. Add 3/4 cup water, stock cubes, sauces and seasonings, bring to the boil, cover and simmer 15 minutes.
  • Blend flour with remaining water to make a smooth paste. Add to the meat and bring to the boil, stirring continuously; boil 5 minutes, cool.
  • Line a lightly greased pie plate with the shortcrust pastry.
  • Spoon in the cooled meat filling.
  • Moisten edges of pastry base with water. Top with puff pastry sheet, pressing down gently to seal edges. Trim and score edges. Glaze.
  • Bake in very hot oven for 15 minutes, reduce to moderately hot and cook a further 25 minutes or until pastry is goldn.

Steps:

  • Heat oil in pan, add onions and cook over low heat until soft.
  • Add meat to pan, followed by the rest of ingredients (except flour and egg glaze).
  • Stir well until beef mince is cooked. Stir in flour for 1 minute Bring to boil.
  • Reduce heat to simmer, stirring occasionally to prevent sticking till liquid has evaporated.
  • Remove from pan and leave to cool.
  • Preheat oven to 220 deg celsius.
  • Place pastry sheet into the dish and add cool filling on top.
  • Brush pie edge with egg glaze and place the second pastry sheet over, pressing the edges gently to seal them.
  • Cut two small slits in the pastry to allow steam to escape during baking.
  • Brush top with egg.
  • Bake for 15-20 min at a lowered 180 deg or until golden brown.

Steps:

  • Pre-heat oven at 220 degrees Celsius.
  • Brown meat and onion.
  • Add 3/4 cup of the water, bouillon cubes, ketchup and Worcestershire sauce, pepper, oregano, and nutmeg.
  • Boil and cover for 15 minutes.
  • Blend flour with the remaining 1/4 cup water until it becomes a smooth paste; add to the meat mix.
  • Let cool.
  • Grease a pie dish and line with puff pastry.
  • Add the cooled filling mixture; brush edges of pastry with milk or beaten egg; put the pastry top on; press edges down with a fork.
  • Trim edges and glaze top with milk or beaten egg.
  • Bake in a very hot oven, 220 degrees Celsius for 15 minutes.
  • Reduce heat to 180 degrees Celsius and bake for 25 more minutes, or until golden brown.
