HUNGARIAN MUSHROOM STEW

If you love mushrooms, you'll love this vegetarian stew! From Vegetarian Passport by Linda Woolven. After reading Annacia's review I've added cayenne pepper as an optional ingredient for those who enjoy a spicier stew.

Hungarian Mushroom Stew image

Steps:

  • Melt butter in frying pan, add onions, and saute until tender.
  • Add mushrooms and saute for a few more minutes, adding more butter if needed.
  • Add peppers and saute 5 minutes, until mushrooms are soft and brown.
  • Add garlic and saute another 2 minutes.
  • Add spices, sugar, tomatoes and red wine and simmer for 30 minutes, stirring occasionally.
  • Serve over dumplings or noodles.

MUSHROOM STEW

I adapted this recipe from one I found in a cooking magazine called Mary Dee's. You could add cooked meat to this if you wanted to, but it is very good as is. When I bring this stew to work for lunch, the garlic guarantees popularity ALL afternoon!

Steps:

  • In large soup pot, combine mushrooms, tomatoes, onion, garlic, red pepper, broth, and tomato sauce.
  • Bring to a boil.
  • Reduce heat and simmer, loosely covered, for 20 minutes.
  • Turn heat to high, uncover and cook until sauce is slightly thickened, about 10 minutes.
  • Season with salt& pepper.
  • In another pan, cook pasta until tender.
  • Drain pasta and add to stew along with beans.
  • Mix gently and serve hot.
  • For Vegetarian use vegetable stock.

Steps:

  • Preheat oven to 250 degrees F.
  • Slowly saute bacon, onion, butter and mushrooms until the onions and bacon are lightly browned.
  • Remove the bacon, onion and mushrooms with a slotted spoon and place in a baking dish.
  • Add the veal to the bacon fat/butter left in the frying pan.
  • Brown meat on all sides.
  • Remove meat from the frying pan and mix with mixture in the baking dish.
  • Add the chicken broth, salt, pepper, paprika and sour cream to the bacon fat in the frying pan.
  • Mix well and bring to almost boiling (do not boil).
  • When hot pour over meat in baking dish.
  • Cover dish with lid or tin foil and bake for 1 hour or until veal is tender.

Steps:

  • In a large bowl, add beef, bread crumbs, egg, garlic, salt and pepper. Mix together and form into meatballs roughly 1 1/2" in diameter.
  • In a large skillet, heat oil over medium-high. Add half the meatballs - cook until all sides are lightly browned, about 5 to 7 minutes.
  • Scoop the meatballs out onto paper towels to drain - repeat with remaining meatballs.
  • Pour off all but 1 tablespoon of the fat in the skillet and add the onion, mushrooms, carrots and celery - cook until softened, about 3 to 5 minutes.
  • Sprinkle in flour and paprika -whisk in flour and paprika and let cook for 1 minute.
  • Gradually whisk in the beef broth and bring to a boil - season to taste with salt and pepper.
  • Add the reserved meatballs and caraway seeds, reduce the heat to medium-low and simmer for 5 minutes.
  • Serve over warm egg noodles.

  • Melt the butter in a large pot over medium heat. Saute the onions in the butter for 5 minutes. Add the mushrooms and saute for 5 more minutes. Stir in the dill, paprika, soy sauce and broth. Reduce heat to low, cover, and simmer for 15 minutes.

A warm, filling soup that is a wonderful cool weather lunch or dinner and is especially great with a side of multi-grain bread! I load up on thickly cut mushrooms and use traditional Hungarian Sweet Paprika. Um! Definitely use the tomato and pepper. It gives it a totally different flavor. You may serve immediately or refrigerate and reheat. I find that the soup just as good if not better the next day. Use a ripe tomato. Also, if you can't find a Hungarian wax pepper, try another mild chile pepper and just use a smaller piece.

Steps:

  • Melt the butter in a large pot over medium heat. Cook and stir the onions in the butter until fragrant, about 5 minutes. Add the mushrooms and continue cooking until the mushrooms are tender, about 5 minutes more. Stir the dill, paprika, soy sauce, and chicken broth into the mushroom mixture; reduce heat to low, cover, and simmer 15 minutes.
  • Whisk the milk and flour together in a small bowl. Stir the mixture into the soup. Add the tomato and Hungarian wax pepper. Return cover to the pot and simmer another 15 minutes, stirring occasionally. Season with salt and pepper.   • In 3 1/2 to 4- quart cooker, combine beef, carrots, onion and bell pepper. Add flour, paprika, salt, thyme and pepper; toss to coat. Add chili sauce and broth; mix well.
  • Cover; cook on low setting for 7 to 8 hours.

  • Soak the dried mushrooms in the stock for 20 minutes, then strain the liquid (reserving it) and set aside.
  • Heat 1 tbsp of the oil in a flameproof casserole. Fry the fresh mushrooms in batches, adding more oil, until golden brown. Remove from the pan and set aside.
  • Add the remaining oil and fry the onion, peppers, garlic, paprika and caraway seeds with a little salt and pepper for 10 minutes until softened. Return the fried mushrooms to the pan, add the rehydrated porcini and stir in the stock, chopped tomatoes and tomato purée. Bring to the boil, cover and simmer gently for 45 minutes (see Make Ahead).
