BAKED SWEET POTATO "FRIES" WITH LA BOITE SPICE MIX
Steps:
- Preheat the oven to 450 degrees.
- Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the spice mix, brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.
- Into a bowl add the turmeric, basil, chili, and mustard seed. Grind together in pestle and mortar or a clean coffee grinder the black pepper and coriander seed and add to the other spices.
- Grind together the cumin and caraway seed as above and add to the spices and mix everything together.
INA GARTEN'S BAKED SWEET POTATO FRIES
These potatoes are not quite as crispy like fries but they're better for you because they're baked. The serving size says 4, but I eat all of them at one sitting! Adapted from Ina Garten's book,"Back to Basics"(Barefoot Contessa). Ina likes to cut them into fairly large wedges, but I like them smaller(like french fries) because I love the crispiness and get more of it with smaller wedges! Sweet potatoes are available year-round, but their prime season is really autumn and winter. Choose potatoes that are smooth and unblemished, and use them fairly soon because they don't keep as well as other potatoes.

Steps:
- Preheat oven to 425*F.
- Cut sweet potatoes in wedges or like french fries.
- Place wedges on large baking pan or cookie sheet. Pour over olive oil, and toss to mix.
- Now sprinkle over brown sugar, salt, and black pepper. Toss to coat wedges.
- Spread out in a single layer. Place pan in oven and bake for 15 minutes, then take out and turn wedges over.
- Place back in oven and bake another 15-20 minutes, or until golden brown and crispy on the outside.
- Sprinke with extra kosher salt to taste. The cooking time will depend on how big the wedges are. Enjoy!
- Note: These are also good with a little ground cumin sprinkled with the other seasonings. Have fun and experiment!

SMASHED SWEET POTATOES
Steps:
- Preheat the oven to 375 degrees F.
- Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. Remove from the oven and scoop out the insides as soon as they are cool enough to handle. Place the sweet potato meat into the bowl of an electric mixer fitted with a paddle attachment and add the orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt, and pepper. Mix together until combined but not smooth and transfer to a baking dish.
- Bake the potatoes for 20 to 30 minutes, until heated through.
SPICY SWEET POTATO EMPANADAS
Steps:
- Preheat the oven to 425 degrees. Line one sheet pan with aluminum foil and another with parchment paper.
- Rub the sweet potatoes with olive oil and prick them all over with the tines of a fork. Place the potatoes on the foil-lined sheet pan. Bake for about 1 hour, until very tender when pierced with a knife. Lower the oven to 375 degrees.
- Allow the potatoes to cool enough to handle, then peel and discard the skins, placing the potatoes in the bowl of an electric mixer fitted with the paddle attachment. Add the sour cream, butter, maple syrup, chile powder, orange zest, orange juice, 1 1/2 teaspoons kosher salt, and 3/4 teaspoon black pepper and mix well. Set aside.
- Unfold one sheet of the cold puff pastry on a floured cutting board. Roll the sheet into a 12-inch square with a rolling pin. With a sharp paring knife, cut four 5-inch circles from the pastry, using a dish as a guide and discarding the scraps. Place a heaping soup spoon of filling on each circle, leaving a 1-inch border. Brush the edges of the circles with the egg wash and fold over, making half circles. Crimp the edges together with the tines of a fork. Repeat with the second sheet of puff pastry. Place on the parchment-lined sheet pan. Chill for 15 minutes.
- Brush with the egg wash and sprinkle with the sea salt and pepper. Make 2 small slits in each empanada to allow steam to escape. Bake for 25 to 30 minutes, until puffed and browned. Serve hot.

- Place the sweet potato "fries" on a foil-lined baking sheet and toss with the olive oil.
- Bake until golden, about 45 minutes.
- Meanwhile combine the basil, salt, and pepper in a small bowl.

- Cut sweet potatoes in half and then slice into small strips that resemble standard french fries & place in large mixing bowl.
- Sprinkle potatoes with olive oil & all spices, toss until each potato is covered in oil and spices.
- Spread potatoes on boiling pans or wire racks over baking sheets (allows for excess oil to drip and not sit on fries).
- Bake for 45 minutes to 1 hour (until browned, they will still be pliable).
- Serve with sour cream or my spicy sour cream dip.

- Preheat your oven to 450 degrees Fahrenheit. Get out 2 large, well worn, seasoned baking sheets.
- Scrub the potatoes and slice into 1/2" thick disks, lay the discs flat and cut into 1/2� batons or matchsticks. Put cut sweet potatoes in a large bowl -- big enough to toss them around.
- In a smaller bowl, combine the egg white, oil and seasoning. Whisk with a fork or whisk until combined (and "not snotty" as my eloquent friend, Kristen, puts it) or get fancy and emulsify with a hand blender.
- Pour the oil/egg white mixture over your sweet potatoes and toss to coat evenly.
- Using your immaculately clean hands lift the coated sweet potato batons from the bowl (allowing any excess gunk to drip back into the bowl) and transfer to the baking sheet. Spread the fries out in a single layer so that none are touching -- this is a drag but critical to the crispiness factor of the finished fry. Bake both sheets in the oven and bake for about 15 min, at which time the fries will be half done.
- Remove both trays from the oven and, using a metal spatula, loosen the fries from the baking sheet. Give the sheet a vigorous shake to make sure that all are free. Use a pair of tongs to turn each fry individually -- again, tedious but crucial to the crispiness factor.
- Return the pans to the oven for another 10 - 15 minutes, until the fries are deep golden, brown and tender on the inside. You may have to sample a few just to be sure.
- Once done remove fries from the oven, season cautiously with sea salt (they may already be quite salty from the Cajun seasoning) and serve right away. These babies do not like to sit around and you worked hard for all that crispiness!
