Indian Kadai Chicken image

Steps:

  • Grind corriander seeds and whole red chillies into a coarse powder.
  • Heat oil in a kadai.
  • Add bay leaves.
  • After about 30 seconds, add onions and saute till they turn light golden brown.
  • Add ginger-garlic paste.
  • Saute for 2 minutes on medium flame.
  • Add the above coarse powder.
  • Stir well.
  • Add tomatoes and cook till they are fully cooked.
  • Add chicken pieces, salt to taste and red chilli powder.
  • Mix well.
  • Cover the kadai.
  • Cook till the chicken becomes tender.
  • Sprinkle garam masala powder over the chicken.
  • Garnish with corriander leaves and onion rings.
  • Serve hot with rotis or parathas.

1 kg chicken, washed,cleaned and cut into big pieces
4 tablespoons oil
1/2 cup onion, sliced
1 1/2 cups tomatoes, peeled and sliced
2 tablespoons fresh coriander leaves, chopped
1 tablespoon ginger paste

  • Heat oil in a large skillet over medium heat. Add chile peppers; cook and stir until browned, about 1 minute. Add tomatoes; cook and stir until softened and reduced, about 7 minutes. Stir in chicken; cook and stir until it is dark red and sauce thickens and starts to stick to the pan, 10 to 15 minutes.

Steps:

  • Combine tomatoes, yogurt, garlic, and ginger in a blender and process until smooth.
  • Heat oil in a large frying pan over medium heat. Add onion and fry until soft, 3 to 4 minutes, stirring constantly. Stir in curry paste and fry until fragrant, 1 minute more, stirring once or twice. Add the tomato mixture and chicken to the pan and mix together. Season with salt and pepper. Remove pan from heat.
  • Mix water and flour together in a bowl. Stir into the chicken mixture in the frying pan. Return pan to the heat and bring to a boil, stirring constantly, about 5 minutes. Reduce heat to low, cover, and cook until thickened, about 15 minutes more. Sprinkle with cilantro and serve immediately.

Steps:

  • 1. Cut the chicken into pieces, put them into a container with one egg and 2 tea spoon of salt. Wait for 20-30 minutes.
  • 2. Prepare curry, chili powder and sugar; the amount should be 3:2:1, if you buy the package for example, I suggest to put half pack. If don't like spicy, no need to have chili powder, doesn't influence the taste.
  • 3. Cut the onion, garlic and ginger into small pieces (if you would like to add some vegetables, you could have carrot, or mushrooms).
  • 4. Put oil (the amount should be more than normal dishes), fire 4, when it is hot, put onions, garlic and ginger, fry 3-4 minutes.
  • 5. Put the curry, chili powder and sugar into the pot, fry 1-2 minutes with fire 3.
  • 6. Put the chicken into the pot and fry till the color turns yellow, 4-5 minutes with fire 4.
  • 7. Important! 2 spoons of yogurt, 2 spoons of tomato paste, 200ml of coconut milk, mix them, and fry for 20 minutes, fire 3.
  • 8. Put the lemon juice (equal to half real lemon) and fry 5 minutes with fire 4-5.
  • It is done!

  • Kadhai Chicken recipe is a perfect amalgamation of spiced chicken and creamy gravy. Here’s a simple recipe that will help you prepare this dish at home. Take a non-stick pan and roast the coriander seeds, once the seeds start crackling, remove and crush them thoroughly and keep it aside. Heat oil in a pan over a low flame, add red chillies and fenugreek seeds. Stir for a few seconds. Add the onions and increase the flame to medium. Cook till onions turn light brown. Add garlic and stir.
  • Now add ginger paste, coriander seeds, red chilli powder and coriander powder. Add chicken pieces and cook for 3-4 minutes on high flame. Stir to blend all the masala with the chicken. Now add the chopped tomatoes and cook for 3 minutes. Add salt, dry mango powder and garam masala powder.
  • Cover the pan with a lid and cook for 10 minutes till chicken is tender. Stir from time to time and add the tomato puree. Then add the coriander leaves and cook for a minute. Now add the capsicum, tomato, ginger slices and green chillies. Mix well and reduce the flame. Add milk and mix. Add water to make it semi-dry and cook for a minute. Remove from heat and serve hot with rice or rotis.
