GROUPER FILLETS WITH GINGER AND COCONUT CURRY
The chef Patrick Jamon applies French cooking techniques to tropical ingredients grown, caught or gathered near his restaurant, Villa Deevena in Los Pargos, Costa Rica. He is particularly fond of grouper, which is often caught by his son Dean and served at the restaurant, but you could substitute red snapper, cod or mahi-mahi. When reducing the coconut milk, be sure to keep it at a simmer rather than a boil, so it doesn't curdle. Red curry paste can vary in its intensity by brand, so you'll want to adjust the amount to taste.

Steps:
- Heat oven to 225 degrees.
- Season the fish generously with salt and pepper. Heat 2 teaspoons oil in a large skillet over medium-high. When the oil is hot, add the fish and cook until browned on both sides, about 3 minutes per side. Transfer the fish to a baking sheet and place in the oven to keep warm while you prepare the rest of the dish.
- Add the remaining 2 teaspoons oil to the skillet. Add the spring onion and cook, stirring frequently, until lightly browned, 2 to 3 minutes. Add the ginger and turmeric and cook, stirring frequently, 1 minute. Add the carrot, snow peas and green peas and cook, stirring occasionally, until crisp-tender, 3 to 4 minutes. Transfer the vegetables to a bowl and cover to keep warm.
- Add the coconut milk and 1 tablespoon curry paste to the skillet, bring to a simmer over medium, then reduce the heat to medium-low and simmer until liquid is reduced by about one-third, about 6 minutes. Whisk in more curry paste according to taste, if desired. Stir in the cooked vegetables and heat until warmed, about 1 minute.
- Divide the fish among shallow bowls. Spoon the sauce and vegetables over the fish, garnish with cilantro and serve.

INDOCHINE GROUPER
I created this recipe one evening to make use of my fridge leftovers - since I live in Singapore, a lot of these ingredients are staple here, but they should also be readily available in most markets. The laksa leaves may be hard to find, but can be substituted with cilantro, lime or curry leaves. Grouper can also be subsituted for any kind of white flesh fillets (cod, bass, etc).

GRILLED PORK BURGERS INDOCHINE
Steps:
- Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium high.
- For the Dressing: combine the mayonnaise, basil, cilantro, green onions, and lime juice in a bowl. Cover and refrigerate.
- For the Patties: combine the fish sauce, jaggery, and chili sauce in a medium bowl. Add the pork, peanut butter, ginger, garlic, and star anise and blend loosely with a fork. Form into 6 equal patties the approximate dimensions of the rolls, making a slight depression in the middle of the patties to compensate for the tendency to bulge during cooking.
- Brush the grill rack with oil. Grill the patties with the grill top closed for 4 minutes. Turn and grill until an instant-read thermometer inserted into the center of the patties registers 160 degrees F, about 4 minutes longer.
- During the last 2 minutes of grilling the patties, place the rolls, cut side down, on the grill to toast.
- To assemble the burgers: spread the roll bottoms with a thin layer of dressing, followed by a lettuce leaf. Add the patties and top with generous dollops of the dressing. Add the roll tops.

- Mediterranean-Style Baked Grouper. One of the healthiest ways to eat grouper is by baking it and serving it Mediterranean-style. Luckily for you, it’s also super flavorsome and quick.
- Blackened Grouper. When in doubt, I say go with blackened seasoning for your fish. It’s an easy, foolproof way to prepare fish, and here’s how you’ll do it.
- Grouper Piccata. Piccata is a versatile sauce of butter, lemon, and parsley. But don’t let the minimal ingredients fool you. It does wonders to add some zip to the grouper.
- Oven-Baked Parmesan Grouper Filets. The firm texture and mildly sweet flavor of the grouper make it a stellar choice for this dish. The sour cream and parmesan coating has a homely touch.
- Pan-Seared Grouper with Lemon Butter. This five-ingredient recipe goes to show you won’t need much to create a bang-up adornment for grouper. The inconspicuous sauce is remarkably striking once you layer it on top of your fish filet.
