  • Stir the soup, milk, soy sauce, black pepper, beans and 1 1/3 cups onions in a 3-quart casserole.
  • Bake at 350 degrees F for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions.
  • Bake for 5 minutes or until the onions are golden brown.

1 cup milk
2 teaspoons soy sauce

Steps:

  • Cook green beans in boiling salted water until tender, about 3 or 4 minutes. Drain well.
  • Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 3 to 4 minutes. Add the garlic and thyme. Season with salt and freshly ground black pepper, to taste. Cook until garlic is fragrant, about 1 minute.
  • Add brandy or cognac, red wine and chicken broth, bring to a boil. Simmer to blend flavors and reduce sauce, about 2 to 3 minutes. Add green beans to mushroom sauce and toss to coat. Place on a large serving dish, season again with salt and pepper, to taste.
  • Top with fried onions before serving.
  • 2 quarts peanut oil, for frying
  • 2 large red onions, thinly sliced and separated into rings
  • 1/2 cup buttermilk
  • 2 cups arborio rice coating, recipe follows
  • Kosher salt
  • Heat peanut oil in a deep fryer or deep pot to 375 degrees F.
  • Put onion rings in a large bowl. Pour buttermilk over onions and toss to coat. Shake off the excess liquid.
  • Dip onions into Arborio rice coating, covering thoroughly
  • Fry the onions in small batches until crispy, about 2 minutes per batch. Scoop out with a slotted spoon and drain on paper towels. Set aside. Season with salt, to taste.

  • Preheat oven to 350 degrees F.
  • Make the Onion Straws: Combine all the ingredients in a small bowl, toss to mix, and arrange in a single layer on a baking sheet. Set aside.
  • Make the Casserole: Bring a small pot of water to boil and season lightly with salt. Boil the green beans until tender, but still crispy, about 5 minutes. Drain and chill beans in an ice water bath or under running cold water. Drain again and transfer to a bowl.
  • Heat the oil in a large pan over medium-high heat. Add onion, mushrooms, salt, garlic, and pepper and cook, stirring, about 2 minutes. Add the chicken broth and thyme and cook until almost all the liquid is evaporated, about 3 to 4 minutes. Transfer the mushroom mixture to the bowl of green beans, add the sour cream, and toss to combine.
  • Pour the green bean mixture into the glass pie pan. Bake the casserole and onion straws on separate racks until the straws are well browned and crispy (almost burnt, otherwise they will be soggy), about 15 to 17 minutes. Top the casserole with the straws, and serve garnished with thyme sprigs.

  • Boil green beans until cooked to desired softness.

Steps:

  • Whisk the egg with a fork in a small bowl. In a separate bowl, stir together the flour and pepper. Heat the oil in a heavy skillet or deep fryer to 375 degrees F (190 degrees C). Dip each onion ring into the egg and then coat with flour. Add them to the hot oil a few at a time. Fry until golden brown, turning once if needed, it should take about 3 minutes. Set them onto a paper towel-lined plate to drain and cool. Chop into 1/2 inch pieces.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the green beans, cream of mushroom soup, and milk. Stir in about half of the onions. Transfer to a casserole dish.

  • Peel and boil potatoes, drain and set aside to cool.
  • Slice bacon into 1 inch strips. Sauté diced onion while cooking bacon in same pan. I like to use a little olive oil, but it's not necessary. For healthier variety, use turkey bacon.
  • Put prepped green beans into a 1 gallon sized ziploc with 1/2 cup water and steam in microwave for 5 minutes.
  • Grate cheese and set aside.

  • Melt margarine over medium heat.
  • add onion and sauté until translucent.
  • Add mushrooms and sauté until soft.
  • Stir in flour. Cook for a few minutes, stirring constantly.
  • Add the soy milk or non dairy creamer little by little, letting the flour-mushroom mixture absorb it.
  • You should now have what looks similar to a creamy mushroom soup.
