ISLAND TURKEY STRIPS
This is a simple and delicious recipe from 1/2 hour meals. It is a combination of tropical flavors. This is a great way to transport to the islands~without leaving home!

Steps:
- 1. Combine all ingredients in zip lock bag , except the turkey breast strips. Place turkey strips in the plastic zip-lock bag and marinade for 1 hour or you can do it over night in refrigerator.
- 2. In a large skillet place 3 Tablespoons of olive oil and heat. Let turkey strips drip off excess marinade and place in heated skillet. Do not place too many in pan at once.
- 3. Let turkey strips become golden on one side and turn to the other side to finish cooking; about 3-4 minutes on each side depending on the thickness of the meat strips. Enjoy!! A family pleaser.

- Place flour in a large shallow bowl. Cut tenderloin horizontally in half; flatten each half with a meat mallet to 1/2-in. thickness. Sprinkle with pepper. Dip in flour to coat both sides; shake off excess., In a large skillet, heat oil and 1 tablespoon butter over medium heat. Add turkey; cook 3-4 minutes on each side or until no longer pink. Remove from pan; keep warm., In same pan, heat 1-1/2 teaspoons butter over medium-high heat. Add prosciutto and sage; cook and stir until slightly crisp. Add wine to pan; increase heat to medium-high. Cook until liquid is slightly reduced, stirring to loosen browned bits from pan. Remove from heat; stir in remaining 1-1/2 teaspoons butter. Serve with turkey.

- Preheat oven to 425°. In a shallow bowl, whisk egg whites and oil. In another shallow bowl, mix coconut, bread crumbs, sesame seeds and salt. Dip turkey in egg mixture, then in coconut mixture, patting to help coating adhere., Place on baking sheets coated with cooking spray; spritz turkey with cooking spray. Bake 10-12 minutes or until turkey is no longer pink, turning once., Meanwhile, in a small saucepan, mix sauce ingredients. Bring to a boil; cook and stir 1-2 minutes or until thickened. Serve turkey with sauce.

Steps:
- slice turkey breast into strips.
- (large enough pieces so it won't fall through grill rack) put in a container with a tight seal.
- mix soy sauce, oil, diced ginger and minced garlic.
- Pour over turkey, seal container and put in refrigerator for 2-24 hours.
- Turn container several times while marinating Cook on barbque grill or broiler oven until done.
- Serve with salad and fresh fruit.
