ITALIAN DELIGHT
One dish, kid lovin' ground beef, pasta, tomato casserole. This dish is tasty, easy to prepare with a minimum of effort, inexpensive and my 39 year son still requests it for dinner. He's getting married and I'm giving his fiance' a copy of the recipe. Maybe 25 years ago I was home from surgery and my bible study group brought dinners and this was one of them. It was #1 and I got the recipe. It's been a family favorite since.

Steps:
- Brown ground beef in a large frying pan and drain well. Place back in pan, then all the ingredients, except the noodles. Mix well, cover and simmer.
- While preparing the above, cook the noodles al dente, drain well and add to the meat mixture. Save the noodle water as you will need to add liquid to the casserole as it cooks down, but use the saved diced tomato juice first. I add garlic powder to the noodle water, while cooking, to flavor the water.
- Add noodles.
- Cook on low-to-simmer for about 15-20 minutes. Check often and stir. Add tomato juice/noodle liquid, as needed. It can get too thick.

ITALIAN DELI PASTA SALAD
This pasta salad has all my favorite things from the Italian deli - a trio of meats, a mix of cheeses, and giardiniera. I like to switch it up and use other meats like prosciutto, hot calabrese, or mortadella. Giardiniera comes in mild and hot varieties; use whichever you prefer. A good-quality Italian dressing makes a difference too!

- Place all of the salad ingredients except for the cheese in a large bowl. Right before serving, add about half of the dressing and toss well. Add more dressing little by little as necessary; be sure to dress greens very generously, otherwise salad will be bland. Toss in the cheese, then taste and adjust seasoning with salt and pepper, if necessary.
- Note: Ricotta salata is an Italian sheep's milk cheese that has a salty, slightly tangy flavor, almost like a dry Italian feta. It is not the same as the wet ricotta in the tub. You can find it at Whole Foods, gourmet grocers or specialty cheese shops.
- Note: Nutritional information was calculated assuming 1/2 cup of ricotta salata and all of the dressing was used.

- Place the greens in bowls, then top with the vegetables, olives, pepperoncini, Parmesan shavings, and croutons, then drizzle with dressing. Or, you can place them all together in a large serving bowl and toss with the dressing. (If making in advance, refrigerate the components separately and keep the croutons at room temperature. Bring the dressing to room temperature before serving.)

- Warm Castelfranco with Vincotto and Blu di Bufala. This simple and magical combination of ingredients from chef Carlo Mirarchi includes Castelfranco (a mild radicchio), vincotto (aged vinegar), and the superb blue cheese blu di bufala.
- Summer Farro Salad. Chef Marco Canora says you can swap in any starch — like bread or pasta — for the farro in this recipe. Canora simmers farro in water with sautéed onion, carrots, and celery.
- Antipasto Salad with Bocconcini and Green-Olive Tapenade. Chef Nancy Silverton is an Italian cooking expert, getting the biggest flavor from the simplest ingredients.
- Tomato, Haricots Verts, and Potato Salad. This rustic Italian salad is a great way to showcase perfect, in-season produce. Swap out the summer tomatoes and green beans for roasted root vegetables and fennel in the winter, or asparagus and shaved artichokes in the spring — the possibilities are endless.
- Shaved Raw Asparagus with Parmesan Dressing. Asparagus often makes wine taste vegetal. To counter that, chef Mark Ladner mixes shaved spears with a supremely wine-friendly ingredient: Parmesan.
