This is a recipe I got from my father who got it from a little old lady he knew from Italy. I always simmer this sauce with my meatballs (recipe posted). You can also add sausage if you like. This sauce is to die for!!!!

Authentic Italian Tomato Sauce image

Steps:

  • In a large pot, sauté onion and garlic in olive oil.
  • Empty plum tomatoes into large bowl and squash with your hands.
  • Add all ingredients (including any meatballs or sausage you want to add) to pot and simmer for 3 hours.

Italian Sauce from Scratch image

Steps:

  • Stir fry Celery, Carrots, Green Peppers, Onion & Garlic in olive oil in large saucepan. Season with Salt & Pepper, stirring frequently for 15 minutes. You don't want to burn the garlic!
  • Add the Ground Meat and brown for 15 minutes, continue stirring as you don't want this to burn. Season again with Salt and Pepper, to taste.
  • Add Crushed Tomatoes, Tomato Paste,1 full can of water & Bay Leaves. Leave lid on pan until it starts to boil.
  • Turn heat down still keeping at a low boil, put lid back on pan and leave just a 1/2" crack to let steam out. You have to stir sauce often so it will not stick to bottom pan.
  • You will have to add 1-2 cans of water during cooking to thin sauce out. If it appears to be getting to thick, add another can of water.
  • DO NOT ADD ANY WATER THE LAST 1.5 hours or sauce will be too thin and watery.
  • Sauce must cook for 5-6 hours.
  • I add the parsley after this has been cooked, when it is off heat and cooling down.
  • *Plan to make this on a day that you will be around the home. It is labor intensive and must be babysat.
  • **The serving size and time frame are guesstimates.

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the garlic, sausages and onions and cook until lightly brown.
  • Add the crushed San Marzano tomatoes and 1/2 can water, bring to a simmer. Add the tomato puree, 1/2 can of water and simmer again. Repeat with the tomato sauce, again adding 1/2 can of water and bring the sauce to a simmer. Add the tomato paste and cook through.
  • Add the basil, parsley, marsala wine, pepper, salt and sugar into the pot and stir. Simmer for 2 to 3 hours, stirring frequently.

Classic Italian Bolognese Sauce image

Steps:

  • In a 3 quart saucepan heat oil and butter. Add pancetta and cook for 6 to 8 minutes, or until most of the fat has be rendered. Then add carrots, celery, and onions and saute for 3 minutes. Now add the beef, salt and pepper to taste and cook until the beef is no longer pink. Add the milk and simmer gently, stirring occasionally, until the milk is completely evaporated. Add wine and simmer until evaporated.
  • Finally, add the tomatoes and simmer slowly, stirring occasionally, for 2 hours partially covered. It's important to reduce as slowly as possible. If sauce becomes dry, add 1/2 cup water whenever necessary. When almost ready to serve, bring a large pot of salted water to a boil. Cook the pasta until it is tender but still firm to the bite, 10 to 12 minutes. Drain, pat dry and return to the pot. Add your sauce to the past and toss to combine. Transfer to a serving bowl, and serve immediately. Top with freshly grated parmesan cheese if desired.

  • Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender; set aside.
  • Heat the olive oil over medium-high heat in a large skillet. When hot, add the guanciale and saute 5 to 7 minutes, until golden brown.
  • Add the garlic and red pepper flakes and saute 1 minute. Add the pureed tomatoes, basil, and salt and pepper to taste. Reduce the heat to medium low and stir well. Cook, uncovered, 15 minutes, or until the sauce darkens and thickens. Toss with just-cooked pasta and serve with a sprinkling of parsley and cheese and a drizzle of olive oil.

  • In a blender chop the whole tomatoes with juice and garlic until chunky. In a medium size pot, heat oil on medium high heat. Put onion and mushroom in and saute for about 5 minutes.

Steps:

  • Heat the Olive oil in a Large frying pan/Skillet until very hot.
  • Add onions and stir until soft and slightly brown.Turn down the heat and add the garlic and Red wine. Leave for 1-2 mins.
  • Add tomatoes, basil, oregano, and bay leaves, turn the heat down and leave to simmer for approx 5 mins stirring occasionally. If using fresh tomatoes allow them to reduce slowly, this will take approx 20 mins.
  • Once mixture has simmered add puree and stir in, simmer for a further 5 mins.
  • Remove from the heat and cool. Sauce can be refrigerated for use later on, If using for Pizza topping use a blender until smooth and spread on pizza using the back of a spoon. If using for bolognese, brown mince and add when ready.

Steps:

  • In a Dutch Oven or Medium Size Pot, heat butter and olive oil over medium heat until butter begins to froth.
  • Add onion, celery, carrot, garlic, and bacon.
  • Cook until onions are translucent (about 8 to 10 minutes).
  • Remove bacon and remove fat.
  • Chop lean portions of bacon in small pieces and return to pot.
  • Add Ground beef and ground Pork, and cook until meat loses red, raw color.
  • Raise heat and add wine and consomme.
  • Cook sauce until wine and consomme are mostly evaporated.
  • Turn heat down to simmer and add oregano, salt, pepper, sage, red pepper flakes, and nutmeg.
  • Let cook for approximately 20 minutes.
  • Add crushed tomatoes and bring heat to a boil.
  • Once the mixture comes to a boil, return to simmer.
  • Let sauce simmer (very slowly) partially covered for about 2 to 4 hours (the longer the better), stirring occasionally to prevent sticking.
  • About 5 to 10 minutes before serving, add milk.
  • Sauce can now be added to cooked Penne Pasta, Spaghetti or many other Pastas to your liking.
  • Remaining sauce may be frozen for up to two months for future use.

BECHAMEL SAUCE

From Giada De Laurentiis Everyday Italian. She says - This sauce is named after the Marquis de Bechamel. In Italian, it's called balsamella or besciamella. The original and full French version also involves steeping some onion and a bay leaf in milk for 30 minutes to infuse the sauce with more flavor but here's an everyday approach. My simplified version is a snap to make and is perfect with baked rigatoni with bechamel sauce. You could also use it the way you would hollandaise sauce.

Steps:

  • In a 2 quart saucepan, melt the butter over medium heat.
  • Add the flour and whisk until smooth, about 2 minutes.
  • Gradually add the warm milk, whisking constantly to prevent any lumps from forming.
  • Simmer over medium heat, whisking constantly, until the sauce is thick, smooth and creamy, about 10 minutes.
  • Do not allow the bechamel sauce to boil.
  • Remove from the heat and stir in 1/2 teaspoon salt and a pinch each of white pepper and nutmeg.
  • Season the sauce with more salt, pepper and nutmeg to taste.
  • The sauce can be made up to 3 days ahead. Cool, then cover and refrigerate.
