THAI PORK CHOPS
Another recipe from Cooking Pleasures that I am putting here for safe keeping. Serve these with some jasmine rice and green beans for a lovely meal. Feel free to adjust the amount of jalapenos you use ot suit your taste.

Steps:
- Heat the oil in a large nonstick skillet over medium high heat until hot.
- Add the pork chops and cook for 10 min, turning once or until it is no longer pink in the center.
- Remove to a plate and cover with foil while you prepare the sauce.
- Reduce the heat to medium and add the jalapeno peppers and garlic to the skillet. If you need to add a little more oil to the skillet, do so now.
- Cook for 1-2 min or until softened, stirring occasionally.
- Stir in the fish sauce and sugar.
- Bring to a boil and boil for 1 minute.
- Pour the sauce over the pork chops and sprinkle with the chopped cilantro and peanuts.

JACK DANIELS CREAM PORK CHOPS
Great chops. The sauce is so yummy! I pulled this from an online blog, but didn't note which one.

Steps:
- 1. Place pork chops in a resealable plastic bag. Seal bag and hit the pork with a meat mallet to tenderize.
- 2. Heat olive oil and butter in a large skillet. Season the chops with salt and pepper and add to skillet.
- 3. Brown about 4 minutes per side. Turn the chops one more time, reduce the heat to low, cover and cook an additional 10 minutes.
- 4. Transfer chops to an oven-proof dish; cover with foil and set aside. When the sauce is almost finished, place the chops in a preheated 400F oven for approx. 10 minutes to finish cooking.
- 5. Drain grease from the skillet the chops were cooked in; add butter and olive oil.
- 6. Sautee onions and mushrooms in the butter and olive oil until the mushrooms are browned (10-15 min).
- 7. Add garlic and continue sautéing for 2 minutes.
- 8. Mix cornstarch with 2 tablespoons chicken stock in a small bowl and set aside.
- 9. Add the remaining chicken stock, vinegar and whiskey to the skillet; boil slowly until sauce is reduced by over half, stirring frequently.
- 10. Add the cornstarch mixture; stir continually and cook an additional minute or two.
- 11. Add the cream and simmer several minutes until the sauce thickens, stirring frequently. Adjust seasonings with salt and pepper. Add the basil.
- 12. Take the chops from the oven, and add to the sauce. Let rest a bit before serving.
JACK DANIEL'S THAI PORK CHOPS
Trouble thinking of a name for this one. Can use JD, brandy, cognac or similar strong spirits. Works with lamb, beef, or chicken as well as pork. Very simple and very tasty.

Steps:
- Combine marinade ingredients.
- Marinate meat at least 2 hours, or up to overnight in the refrigerator. Marinating in a ziploc bag with most of the air squeezed out works great to maximize contact between meat and marinade.
- Pan fry or BBQ as you like.
- If pan fried, can deglaze pan with a bit of water and/or white wine to have a very nice sauce.

JACK DANIELS PORK CHOPS
Steps:
- Brown chops, add onion, garlic, green peper and white wine, ginger, simmer until onions are soft, add grilling sauce on top of chops, and add beef stock. Simmer until chops are tender.(3/4 hr. or more)
THAI PORK WITH PEANUT SAUCE
This is a very simple and quick dish that combines the standard pork chop with the wonderful flavor of coconut and peanuts. Even the kids loved it.

- On a plate, combine the flour, cumin, cayenne pepper and 1/2 teaspoon of salt. Stir to distribute the spices. Coat the pork chops with the flour mixture, and shake off any excess.
- Heat the oil in a large skillet over medium-high heat. Place the pork chops in the hot skillet, and fry for about 4 minutes per side, until cooked through.
- While the pork chops cook, stir together the chicken broth, coconut milk, peanut butter, honey, ginger and 1/4 teaspoon of salt. Remove the pork chops to a serving platter, and keep warm.
- Pour the peanut sauce into the skillet. Cook, stirring constantly for 2 minutes, or until thickened. Pour peanut sauce over the chops, and garnish with green onion, bell pepper, peanuts and cilantro.

- Combine the chili sauce, vinegar, coconut milk, sugar, garlic, ginger, peanut butter, soy sauce and lime juice in a saucepan, whisking to combine. Bring to a boil, the reduce to a simmer and cook for 2 to 3 minutes until slightly thickened.
- Heat an oven-safe skillet over medium-high heat. Sprinkle the pork chops with a generous amount of salt and pepper. Add the coconut oil to the skillet and once it’s melted, add the pork chops. Brown on both sides until golden, about 1 to 2 minutes per side. Pour half (or as much as you’d like) of the peanut sauce into the skillet. Place the skillet in the oven and bake the pork chops for 20 minutes. I usually bake 15 minutes covered, and the last 5 uncovered.
- Serve the pork chops with extra sauce if you’d like, a garnish or cilantro, peanuts and fresh lime wedges.
