JAMAICAN MARGARITA
Hibiscus started showing up in New York City cocktails around 2010, jazzing up drinks with its fuchsia hue and tropical perfume. This one, adapted from the bar at Hecho en Dumbo in the East Village, takes advantage of jarred hibiscus syrup and top-shelf silver tequila to create a kind of Jamaican-Mexican melange. The wild hibiscus blossom specified at the end of the recipe? Entirely optional!

- Fill a cocktail shaker with ice and add the tequila, hibiscus syrup and lime juice. Cover and shake well. Strain into a rocks glass filled with ice and garnish with the hibiscus blossom. Serve immediately.

THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

This is from Cooking Light. "Hibiscus blossoms can be found at Latin grocery stores. Boiling the blossoms in a sugar-water mixture and then steeping infuses more flavor than just steeping them in warm water. This drink is especially good when made with premium-quality tequila"

- Place blossoms in a strainer; rinse under cold water.
- Combine blossoms, water, and sugar in a medium saucepan; bring to a boil.
- Reduce heat, and simmer 10 minutes. Strain; discard blossoms.
- Cover and chill hibiscus mixture.
- Combine hibiscus mixture, tequila, juice, and Triple Sec.
- Serve over ice. Garnish with lime slices.
