JAPANESE SOMEN NOODLES RECIPE WITH SWEET SOY-GINGER SAUCE image

Steps:

  • Cook somen noodles according to package. Drain and set aside. In medium bowl, combine rest of sauce ingredients: garlic, ginger, soy sauce, mirin, sesame oil and chili paste/sauce/flakes. Add additional teaspoons of water to dilute the sauce if it's too salty When ready to serve, dress sweet soy-ginger sauce over somen noodles. Serve cold.

14 oz. dried somen noodles
1/2 teaspoon grated or minced garlic
1 teaspoon grated ginger
1/4 cup Japanese soy sauce
1/4 cup mirin
2 teaspoons sesame oil
1 teaspoon chili paste, chili garlic sauce or chili flakes
green onions for garnish
water to dilute the sauce if it's too salty (optional)
steamed vegetables (optional)
grilled meat (optional)

This simple, Asian-inspired fish and fried noodle dish makes a perfect casual, mid-week supper

Salmon with sesame, soy & ginger noodles image

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small jug, whisk together the soy, rice wine or mirin, stem ginger and syrup, and garlic. Line a roasting tin with baking parchment and put the salmon in it. Pour over half the sauce, then bake for 15 mins until the salmon is cooked through.
  • Meanwhile, bring a large pan of water to the boil. Add the noodles and cook following pack instructions, then drain well.
  • In a small frying pan, lightly toast the sesame seeds for 1 min, then add to the cooked noodles (reserving a sprinkle for the top). Pour the remaining sauce over the noodles, plus any from the roasting tin, and toss together. Serve with the salmon, scattered with the chopped spring onions and remaining sesame seeds.

  • Bring a large pot of water to a boil and cook the soba noodles for 4-5 minutes or just until tender, stirring occasionally so the noodles don't clump. Drain in a colander and rinse well under cold water, tossing to remove the starch.
  • While the noodles are cooking, in a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, sugar and black pepper. Set aside.
  • Heat a large skillet over medium high heat. Add the canola oil and heat until shimmering then add the chopped green onions. Cook, stirring, for 15 to 30 seconds or until fragrant.
  • Add the soy and sesame mixture and cook for 30 seconds, Add the noodles and toss until the noodles are heated through. Add the remaining minced green onion and half of the sesame seeds. Garnish with the remaining seeds and serve warm or at room temperature.
