DOUGHNUT MUFFINS
Found this on the back of Clabber Girl baking powder.These are great muffins. I make them for all occasions. Love to make extra and freeze them.

Steps:
- Beat egg.
- Add in oil and milk and continue to beat until mixed. Set aside.
- Sift flour, nutmeg, salt, baking powder and sugar into the egg mixture.
- Mix and fill muffin cups.
- Combine sugar and cinnamon.
- Sprinkle generously on top of each muffin.
- Add a dollop of butter atop each muffin.
- Bake at 400°F for 20 minutes.
- NOTE: I add a couple of sprinkles of cinnamon to the batter.
- I also sprinkle a little of the cinnamon/sugar mixture on the bottom muffin cups before adding mix.

- Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in milk and vanilla. In another bowl, whisk flour, baking powder, salt, nutmeg, cinnamon and baking soda. Add to creamed mixture; stir just until moistened., Fill greased or paper-lined muffin cups. Bake 18-20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack., Meanwhile, for coating, combine coarse sugar and cinnamon. Dip tops of warm muffins in butter, then coat in cinnamon-sugar.

- Preheat oven to 350 degrees F (175 degrees C). Spray a mini muffin tin with cooking spray or line with paper cups.
- Place flour, sugar, milk, vegetable oil, egg, baking powder, salt, 1/2 teaspoon nutmeg, and 1/2 teaspoon ground cinnamon in a bowl. Mix dough by hand until well combined but some lumps remain. Fill muffin tin with dough.
- Bake in the preheated oven until tops spring back when lightly pressed, but color is not yet golden brown, about 15 minutes.
- Pour melted butter into a bowl. Mix 1/3 cup sugar, 1 tablespoon cinnamon, and 1 teaspoon nutmeg together in a separate bowl. Dip muffins in the butter coating; immediately roll in the cinnamon dusting.

- Preheat oven to 350 degrees F. Grease muffin tin, set aside. In a medium bowl, sift together flour, sugar, confectioner's sugar, and baking powder. In a separate bowl, whisk together egg, milk, butter, vanilla. Add mixture to dry ingredients. Fold batter until well incorporated and light. Pour muffin tins half way. - In a bread machine pan add the milk, water, beaten egg, melted butter, sugar, bread flour, salt, nutmeg, and yeast in the order recommended by the manufacturer. Set machine to the sweet dough cycle (see Editor's Note for using your stand mixer).
- Once the dough cycle is completed, turn the dough out onto a floured board and let it rest for 10 minutes.
- Roll the dough out to a 1/4-inch thickness. With a floured cookie cutter, cut into 2 1/2-inch rounds.
- Place 1/2 teaspoon jam or jelly in center of half of the rounds. Moisten edges with cold water; top with the remaining rounds, pinching edges together firmly. Place the sealed doughnuts on an greased baking sheet. Cover and let rise until doubled in a warm place, about 45 minutes.
- Heat oil in deep fryer to 375 degrees F (175 degrees C). Fry one layer of doughnuts at a time. Turn doughnuts as they rise to the surface until golden brown, about 2 to 3 minutes. Remove from oil, being careful not to poke doughnuts. Drain onto paper towels and toss with sugar, if desired.

- Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini-muffin cups.
- Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
- Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.

- In a small bowl, combine yeast, warm water, and 1 teaspoon granulated sugar. Let stand until foamy, about 10 minutes.
- Place flour in a large bowl. Form a well in the center; add eggs, yeast mixture, remaining 1/4 cup granulated sugar, the butter, nutmeg, and salt. Using a wooden spoon, stir until a sticky dough forms. Turn out dough onto a well-floured work surface; knead until dough is smooth, soft, and bounces back when poked with a finger, about 8 minutes (add more flour if necessary). Place in an oiled bowl, cover with plastic wrap, and let stand in a warm, draft-free spot until doubled in size, 1 to 1 1/2 hours.
- Turn out dough onto a lightly floured work surface, and, using a lightly floured rolling pin, roll out dough to 1/4-inch thickness. Using a 2 1/2-inch round cutter, cut out 20 rounds, re-rolling scraps as necessary. Transfer to a lightly floured baking sheet, cover with plastic wrap, and let rise 20 minutes.
- Whisk together confectioners' sugar and milk in a medium, shallow bowl until smooth. Cover glaze with plastic wrap and set aside until ready to fill doughnuts.
- In a medium saucepan over medium heat, heat oil until a deep-fry thermometer registers 370 degrees. Using a slotted spoon, carefully slip 4 dough rounds into the oil. Fry until golden, turning once, about 1 minute on each side. Transfer to a paper towel-lined baking sheet to drain. Repeat process with remaining dough rounds.
- Fill a pastry bag fitted with a coupler and small bismark pastry tip for filling (such as #230) with the jam. Using a chopstick or a wooden skewer, make a hole in the side of each doughnut. Fit the pastry tip into the hole, and pipe about 2 teaspoons jam into doughnut. Repeat with remaining doughnuts and jam.
- Dip tops of doughnuts in the glaze to cover. Let stand, glaze-side up, until set.

- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- In a large bowl, cream together shortening and 1 cup sugar; beat in egg. Stir together flour, baking powder, salt and 1/4 teaspoon cinnamon. Stir flour into egg mixture alternately with milk. Spoon batter into prepared muffin cups.

- Preheat oven to 350°F.
- Grease a 12-cup muffin pan or line with 12 muffin paper liners.
- Sift together the flour, baking powder, and salt into a large bowl. Stir in the sugar.
- Lightly beat the eggs in a large bowl, then beat in the milk, oil and vanilla extract.
- Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined; do not overmix.
- Spoon half the batter into the prepared muffin pan. Add a teaspoon of jelly to the center of each then spoon in the remaining batter.
- Bake in the preheated oven for about 25 minutes, until well risen and firm to the touch.

- Preheat oven to 190°C/370°F.
- Beat together milk, oil, egg and vanilla with a fork.
- Stir the wet mixture into flour and superfine sugar to combine (just). Don't overmix! The lumps don't matter.
- Spoon the mixture into each muffin cup in your tray so its just under a third full.
- With a teaspoon, add a dollop of strawberry jam, then top with more muffin mix so the cases are just about full.
- Bake for 20 minutes until the tops are springy.
- Melt butter in a saucepan and lay out the granulated sugar in a wide, shallow bowl.
- As soon as the muffins are ready remove from moulds and dip into butter then toll in sugar.

JAM (JELLY) DOUGHNUT MUFFINS
I haven't tried these yet, but from the reviews on taste.com.au people say that they make 6 BIG Texas-style muffins, so I say it would make 6-9 muffins, depending on the size you want. - Preheat oven to 180°C and grease a 6-hole muffin pan.
- Sift the flour into a medium bowl, then add a pinch of salt and the caster sugar.
- In a jug, combine the vegetable oil, egg, buttermilk and vanilla extract. Add to the dry mixture and stir to only just combine. Place a spoonful of the mixture in each muffin hole and make an indent in the centre. Fill each indent with a generous 1/2 teaspoon of strawberry jam.
- Cover the jam with the remaining muffin mixture and bake for 20 minutes.
- Remove from the oven and set aside to cool slightly.
- Meanwhile, melt the butter.
- Combine the extra sugar and the cinnamon in a large bowl.
- When the muffins are cool enough to handle, brush each muffin with the melted butter, then roll in the cinnamon sugar.
- Serve while still a little warm.
