Steps:

  • place all ingredients except fish into blender and puree.
  • place fish in marinade and allow to set 1 hr up to 1 day.
  • cook over med-high heat 3 to 5 minutes on each side.

4 garlic cloves
1 medium yellow onion, chopped
1 jalapeno pepper, seeded and chopped
1 lime, juice of
2 tablespoons olive oil
2 tablespoons maple syrup
2 teaspoons thyme
2 teaspoons black pepper
2 teaspoons allspice
1 teaspoon cinnamon
1 teaspoon nutmeg
1 lb tilapia fillet

We enjoyed this (almost too easy to post) recipe. We used tilapia but I think other white fish would work equally well just adjusting the cooking time per thickness of fish. Recipe source: local newspaper.

Steps:

  • Rub fish fillets with jerk seasoning on both sides.
  • Heat oil in skillet (I used a grill pan) over medium high heat and then add fish.
  • Saute for 3 minutes and turn and cook for another 2-5 minutes or until fish is done.

3/4 lb tilapia fillet
2 teaspoons canola oil

Steps:

  • Season fillets with jerk seasoning. In a large nonstick skillet coated with cooking spray, cook fillets over medium-high heat for 3-5 minutes or until fish flakes easily with a fork, turning once. Transfer to a serving platter and keep warm., In the same skillet, combine the fruit, onions, jelly and almonds; heat through. Stir in mint and lime juice. Serve with fish and rice.
