JAM-FILLED CRUMB-TOPPED COFFEE CAKE MUFFINS
Crumbly on top with a sweet jam surprise inside, these muffins are the perfect hand-held breakfast treat.

- Preheat oven to 325 degrees. Place twelve 2 3/4-by-2-inch panettone papers on a rimmed baking sheet; set aside.
- Make the topping: In a large bowl, whisk together flour, brown sugar, salt, and cinnamon. Add melted butter and, using a rubber spatula, toss until large crumbs form. Set aside.
- Make the muffins: In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, 2 to 3 minutes. Add eggs, egg yolks, and vanilla. Add flour mixture alternating with creme fraiche and mix until well combined.
- Divide batter evenly between muffin cups. Add 1 heaping teaspoon jam to each muffin cup and evenly divide crumb topping among muffin cups. Transfer to oven and bake until golden brown and a cake tester inserted into the center comes out clean, 20 to 25 minutes. Transfer muffins to a wire rack to cool.
CINNAMON CRUMB CAKE MUFFINS
Somewhere between muffins and mini-crumb cakes, these tender breakfast treats have a surprise layer of crunchy, cinnamon-scented crumbs hiding underneath. Browning the butter for the crumbs adds a rich, caramelized depth that rounds out the flavors of vanilla and lemon zest in the batter. These muffins keep well for several days stored airtight at room temperature, and freeze perfectly for up to two months.

- Heat oven to 375 degrees and line a 12-cup muffin tin with liners.
- Make the topping: In a medium saucepan over medium-high heat, melt butter, then let it simmer until the foam on top falls to the bottom of the pot and turns brown, 4 to 6 minutes. It will smell nutty when it's ready. Immediately pour butter into a small bowl to keep it from getting any browner, and let cool for 5 minutes.
- Whisk together flour, sugar, spices and salt in a medium bowl. Pour in the brown butter and stir, pinching the mixture together, until crumbs form. Set aside.
- Make the batter: Whisk together sour cream, eggs, vanilla, almond extract and lemon zest in a mixing bowl.
- In a large bowl, using a stand mixer fitted with the paddle attachment or a handheld electric mixer, mix together flour, sugar, baking soda, baking powder and salt until combined, about 10 seconds. Add softened butter and beat for 20 seconds to work it into the flour. Add egg mixture and continue beating until the batter is very smooth, about 1 minute.
- Sprinkle a scant tablespoon of the topping crumbs into the bottom of each muffin liner. Spoon the batter on top of the crumbs, dividing it evenly.
- Bake muffins for 5 minutes to firm up the tops so the crumbs don't sink into the batter. Remove muffin pan from the oven and lower heat to 350 degrees. Sprinkle the remaining crumbs on top of each muffin. Continue to bake until the muffins are springy to the touch and a toothpick inserted into the center comes out clean, 25 to 30 minutes longer. Cool on a rack for 15 minutes. Use an offset spatula or butter knife to lift the muffins out of the pan. Finish cooling muffins on a rack.
JAM-DANDY MUFFINS
Taken from an old cookbook I picked up at a flea market, these are light, fluffy, and totally comforting on a cold winter's morning. The jam called for is apricot, but I didn't have any of that, nor do I like apricots. Sugar-free cherry jam from a local Amish lady was my choice of filling. It was so deeelish! The muffins were so light and the jam was total decadence! I can't wait until I try the blueberry jam.

Steps:
- Preheat oven to 400 degrees.
- In a mixing bowl, combine flour, sugar, baking powder, salt, and nutmeg. Cut in shortening until particles are fine and about the size of peas.
- Add milk and egg; mix just until thoroughly blended. There will probably be lumps.
- Spoon into a greased muffin tin or paper liners. Place 1 teaspoon of jam on top of each muffin, pressing into batter slightly.
- Sprinkle with the chopped nuts. Bake for 20-25 minutes or until the tops spring back when touched lightly.
- Serve warm. These can also be drizzled with powdered sugar glaze for added sweetness.

- 1. Preheat the oven to 400°F. 2. Sift the dry ingredients together in a large bowl. 3. Whisk the wet ingredients in a medium bowl or blend in a food processor. Add the goodies and stir to combine. 4. Pour the wet mixture into the dry ingredients. Stir just until mixed. Do not overstir. 5. Spoon the batter into a greased or papered muffin tin. Fill each cup nearly to the top. 6. Bake for 15 to 20 minutes. 7. While the muffins bake, prepare the glaze topping. 8. Cool the muffins at least 10 minutes before removing from the tin. Glaze the tops and cool an additional 10 minutes before digging in.

- 1. Preheat the oven to 375°F. 2. To prepare the crumble topping, combine the flour, brown sugar, and cinnamon in a medium bowl. Using a pastry blender or two knives, cut the margarine into the mixture to form crumbles. Set aside. 3. Sift the dry ingredients together in a large bowl. 4. Whisk the wet ingredients in a medium bowl or blend in a food processor. Pour the wet ingredients into the dry ingredients. Stir just until mixed. Do not overstir. 5. Spoon the batter into a greased or papered muffin tin. Fill each cup nearly to the top. Top each cup of batter with 2 teaspoons crumble topping, taking care to spread it evenly over each cup. Too much topping piled high in the middle will prevent the muffins from rising properly. 6. Bake for 15 to 20 minutes. 7. Cool the muffins at least 10 minutes before removing from the tin. When the muffins have cooled to room temperature, squeeze about a tablespoon of jelly into each, using a pastry tube.

- Note: these muffins are going to be denser and richer than your normal “muffin” – but since peanut butter is a thick and rich ingredient, there isn’t much way around the loads of flavor unless you want to use a peanut butter extract. The key is to work quickly here before the peanut butter starts to firm up again, so I suggest measuring out all of your ingredients before starting.
- Preheat the oven to 350 degrees F. Place the butter and peanut butter together in a bowl and microwave for 30 seconds, stirring well. If the entire mixture is not melted, microwave in 15 second increments, stirring well after each, until it is. Set aside to cool slightly.
- In a bowl, whisk together the flour, baking soda, salt and spices. Set aside. Line a muffin tin with liners. Spray the liners with nonstick spray – this will help keep the thicker crumbly dough together. You actually don’t even need to use liners as long as you spray the tin well, let the muffins cool completely and gently lift them out with a spoon.
- In a large bowl, whisk together the egg, brown sugar and vanilla extract until smooth. Stir in the butter and peanut butter, mixing until smooth – the batter will be slightly thick. Add in the dry ingredients and stir until almost combined (it will be very thick) then add in the milk and stir until a batter forms, trying not to overmix. Fill the liners 3/4 of the way full. Use an ice cream scoop or equal measure for each. Press a tablespoon or so of the strawberry preserves into the center of the batter, pushing it into the middle. It’s okay if it goes down the sides! Press the tops of each generously with the crumb topping. Bake for 18 to 22 minutes. Let cook before trying to remove the muffins if you did not use a liner – if you did use a liner, try to let them cool before peeling the liner off.
