JODY'S LENTIL SALAD

My friend's mom, Jody, had some leftover lentil salad in her refrigerator when I was spending a weekend there. I had some for lunch, and after that, I kept sneaking a spoonful every time I was in the kitchen. When I left I asked for the recipe. Here it is! It's very forgiving -- don't worry if you don't have the exact right amount of everything. It can be served hot or cold. Perfect to bring to a potluck or a picnic, or just to keep around as a side dish.

Steps:

  • Put the first five ingredients (everything through the water) into a pot a simmer for 20 to 25 minutes, until the lentils are done but not mushy. Remove the bay leaf and drain any remaining water.
  • While the lentils are cooking, whisk together all the rest of the ingredients in the bottom of the bowl that you ultimately want to use to serve or store the dish. When the lentils are done and drained, pour them on top of everything else and stir it all together. Enjoy!

1 lb lentils
1 cup finely diced carrot
1 teaspoon dried thyme
1 bay leaf
8 cups water
1 tablespoon Dijon mustard
1/2 cup olive oil (or split between olive and canola)
1/4 cup red wine vinegar or 1/4 cup balsamic vinegar
1 cup finely chopped onion
1 diced green pepper
4 tablespoons chopped fresh parsley (I've always used parsley) or 4 tablespoons fresh tarragon (I've always used parsley)
salt and pepper (remember that there's already salt in the mustard)

Steps:

  • Soaked the raisins in water for 20 minutes, meanwhile chop the broccoli into very small pieces.
  • Mix it with the onions, cheddar cubes and bacon.
  • For the dressing mix mayo, vinegar and sugar all together.
  • Add raisins and sunflower seeds to broccoli mix.
  • Mix a little dressing at a time, you may not need to use all of it.

1 large broccoli
1 cup raisins
1 small onion, chopped fine
1/2 cup cubed cheddar cheese
3 -5 slices cooked bacon, crumbled
1 cup sunflower seeds
1 cup mayonnaise
1 tablespoon vinegar
1/4 cup sugar

  • Strip leaves off stems from 1 large bunch Tuscan kale; discard stems or save for later! Stack leaves, then roll into fat cigars. Slice crosswise into ¼" strips to long, thin ribbons. Unfurl ribbons and run your knife through them just once or twice more to shorten any very long strips. Transfer to a large bowl, season with salt, and massage until kale is silkier, softer, and darker in color, 1–2 minutes.
  • Bring a large pot of heavily salted water to a boil over high heat. While you're waiting, prep the spiced oil. Coarsely chop ½ cup raw almonds; set aside. Trim 3 scallions and separate white and green parts (save the green parts for later in the recipe); thinly slice white parts and transfer to a small skillet. Smash and peel 4 garlic cloves. Add those to same skillet, too. Using a vegetable peeler or paring knife, remove three 3" strips of lemon peel (avoiding white pith); reserve rest of the lemon for your salad dressing. Add peels to skillet. Pour ½ cup extra-virgin olive oil into skillet and stir so that all of the elements are coated in oil.
  • Add 1½ cups black beluga or French green lentils to now-boiling water, reduce heat to medium, and simmer, uncovered, until lentils are tender but still al dente, 20–25 minutes (they'll turn mushy if overcooked). We love to cook lentils like pasta—that is, in an abundant amount of salted water—so that we can monitor their doneness as they cook and make sure they don't get too soft.
  • While lentils cook, heat skillet with scallion mixture over medium. Cook, stirring occasionally, until garlic starts to brown and lemon peel starts to curl, about 3 minutes. Add almonds and cook, stirring frequently, until almonds are browned, about 3 more minutes. Remove from heat and stir in 1 Tbsp. cumin seeds and ½ tsp. crushed red pepper flakes—the residual heat from the oil will bloom those spices and bring out their flavors.

  • Combine the lentils in a saucepan with 3 cups of water (or veggie broth) and stir to combine. Cook over medium-high heat until the broth reaches a simmer. Then reduce heat to medium-low, cover and maintain the simmer until the lentils are tender, about 20-25 minutes depending on the type of lentils used. Use a strainer to drain and rinse the lentils in cold water for 1 minute until they are chilled, and set aside.
  • Meanwhile, as the lentils are cooking, combine all of the lemon dressing ingredients in a small bowl and whisk together until combined.
  • Add the cooked and chilled lentils, cucumber, red onion, mint and sun-dried tomatoes to a large bowl. Drizzle evenly with the lemon dressing and toss until evenly combined.
