RED PEPPER SAUCE

- Heat the olive oil in a saucepan, add the peppers, cover and simmer over very low heat, for about 20 minutes or until tender. Puree the cooked peppers through a food mill to remove the skins. Season to taste with salt and pepper. The sauce is ready to be used like this over steak, grilled polenta, poultry, lamb or grilled seafood or can be enhanced with a few tablespoonfuls of the possible additions.

- Heat oven to 200C/180C fan/gas 6. Place the peppers on a baking tray and roast in the oven for about 45 mins until the skins are blackened. Remove from the oven and put into a plastic bag - this makes them sweat and the skins slip off more easily. When cool enough to handle, peel off the skins with your fingers. Slice the peppers open, pick out and discard all the seeds and membrane, then roughly chop the red flesh.
- Heat the olive oil in a frying pan. When hot, fry the garlic and shallot for a few mins. Add the chopped peppers and continue to fry for a few mins, stirring to combine everything. Add the vegetable stock, bring to the boil, then allow it to reduce a little.
- Pour the contents of the pan into a blender and whizz until smooth. Adjust the seasoning to taste. Depending on the ripeness of the peppers, you shouldn't need any sugar - but if they retain a slightly bitter flavour, return the sauce to the pan, add sugar to taste and let it dissolve over the heat. Serve hot or at room temperature.

- Put the butter in a large, high-sided frying pan, then fry the shallots and peppercorns over a medium heat for 5 mins, until the shallots have softened but not browned. Add the brandy and cook until it has reduced away to almost nothing.
- Pour the wine into the pan, turn up the heat and boil rapidly until reduced by half. Add the stock and reduce again, this time by two-thirds, this will take around 5 mins. Stir the cream into the sauce and allow it to thicken slightly. Check the sauce is seasoned to your liking before serving with steak.

JOHNNY'S FOOD HAVEN PEPPER SAUCE
The motto at Johnny's Food Haven in Port of Spain, Trinidad, is HOME COOKING AWAY FROM HOME, and this is one of Johnny's best home recipes. The aromatic herb traditionally used in this sauce is shadow bennie, or culantro, but since it is difficult to come by outside of the islands, cilantro may be used instead. As a variation, you can add 1/2 to 1 cup cooked and pureed pumpkin or carrots to make the sauce milder. Serve this sauce as an accompaniment to grilled meats, poultry, or fish. As with all of my recipes that call for a specific type of pepper, you can substitute with any other type of pepper, the flavor profile of the dish might be changed slightly, but it should still be good. - Place the chile peppers and water in a blender or food processor and puree until smooth.
- Transfer to a nonreactive bowl, add remaining ingredients and stir well. Let sit at least 1 hour, before using, to allow the flavors to meld.
