KAI YAT SAI TALAY (THAI OMELETTE WITH SEAFOOD)

An unusual omlette whose recipe I found in a magazine. I am yet to try this one. Quite frankly, I am all for a more... uhh... conventional omlette.

Kai Yat Sai Talay (Thai Omelette With Seafood) image

Steps:

  • Fry garlic and onion till translucent.
  • Add prawns and squid and saute till cooked.
  • Add all the vegetables and sauces and stir-fry for 5 minutes.
  • In a medium bowl, whisk together the eggs and a little salt and pepper.
  • Heat the corn oil in a hot pan and pour in the egg mixture to make a thin, flat omlette.
  • Place the omlette on a plate and spread the cooked ingredients on one half of the surface.
  • Fold the other half over and garnish with chopped fresh coriander leaves.
  • Serve hot.

30 ml tomato sauce
1 teaspoon fish sauce
10 ml soy sauce
1 teaspoon garlic, chopped

2 tablespoons corn oil
salt, to taste

Easy Thai Omelet With Sriracha Sauce image

Steps:

  • Combine eggs, fish sauce, and water in medium bowl and use fork or whisk to blend them well. Heat oil in medium skillet or wok over medium-high heat until a bit of the egg mixture sizzles and blooms at once.
  • Pour in eggs and as soon as they begin to set, pull the puffy edges gently toward the center, letting the uncooked eggs in the center flow out to the edges and cook. When the edges are golden and the surface almost set, gently flip the omelet and cook other side for 1 minute. Do not fret if it breaks.
  • Scoop the omelet out onto a serving plate, and serve at once with small saucers of Sriracha sauce.

  • Thinly slice scallions, separating the greens from the whites. Mince garlic. Roughly chop mushrooms and cilantro. Mince Thai chili.
  • In a frying pan, sauté chopped mushrooms with some vegetable oil until soft. Add chopped garlic and scallion whites. Add tomato paste over high heat and let fry shortly. Season it with salt. Add most of chopped cilantro when it’s almost done and mix together well. Remove from heat and set aside.
  • In a bowl, whisk the eggs together with fish sauce, half of black sesame seeds, and chopped Thai chili. Season with salt and pepper if necessary. Pour half of the mixture into a big frying pan with hot oil to make a crepe. Add half the prepared mushroom mixture on one side of the crepe, then fold it in half to form an omelette. Repeat the process and make another omelette with the remaining egg and mushroom mixture.
  • Garnish with oyster sauce, scallion greens, Thai basil, remaining black sesame seeds and cilantro. Enjoy!

  • In a medium bowl, beat together eggs, 1/2 teaspoon of the fish sauce, and white pepper to taste.
  • In a large 10 inch skillet, drizzle 2 tablespoons of of the vegetable oil over medium high heat. Once oil is heated, add ground pork, breaking up into small pieces. Cook, continuing to break it up, until browned, about 2 minutes. Decrease heat to medium. Stir in remaining 2 teaspoons fish sauce, tomatoes, green beans, shallots, sugar, soy sauce, and white pepper. Cook, stirring occasionally, until tomatoes release some of their juices and green beans are cooked through, about 5 minutes. Remove to a bowl, cover, and clean skillet.
  • Return skillet to medium heat and drizzle 1 teaspoon of oil. Add 1/4 of the egg mixture, swirling to coat the bottom of the pan in a thin layer. Cook until the underside is golden and the top is barely moist, about 1 minute. Remove to work surface if you want one side less done. To completely cook the egg, flip and cook until golden on the other side. Remove to work surface. Fill the center of the omelet with 1/4 of the pork mixture. Fold in 2 sides on opposite ends to cover the filling. Fold in the remaining opposite sides to create a square with the filling completely enclosed. Place the omelet on serving platter with folded sides down. Repeat with remaining egg mixture, oiling the pan with 1 teaspoon oil before each addition, to make 3 more omelets and use up remaining filling.
  • Lightly cut an X into the top of each omelet to expose the filling. Serve immediately with rice and garnish with cilantro and green onions.
