BLISTERED GREEN BEANS WITH HERB SAUCE
The green sauce in this recipe is similar to pesto, but lacks cheese and has a bigger punch of acidity. The mild flavor of pistachios enhances the natural sweetness of the lightly charred beans, though the more traditional pine nut would also work well for this dish.

Steps:
- Preheat a deep fryer to 300 degrees F, or in a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 300 degrees F.
- In a bowl, mix the tempura mix and the beer. In a separate bowl, mix the string beans, heavy cream, flour, and salt. Add the bean mixture to the tempura mixture and coat the beans well. Lift the coated beans out of the batter, allow the excess batter to drip back into the bowl, and add the beans to the fryer and fry, in batches, until light golden brown. Drain the beans on paper towels, and serve immediately.
BEANS AND BEER
Beans and Beer is the perfect side dish for your summer outings. It's best served at room temperature, but it can also be refrigerated and served cold as a bean salad. Because it has no ingredients of animal origin, it can be left out of refrigeration for hours without a problem. If you're in a hurry and don't have time to soak the beans, you can substitute 2 cans of pinto beans for the dried beans. Add the undrained canned beans and leave out the sugar and salt the recipe calls for.Originally from the food section of the Houston Chronicle under a "Cook It Light" heading.
