MOLASSES CRINKLES
Super soft, chewy and fresh tasting Molasses cookies. I always prefer to under bake cookies so they're soft but if you prefer a crisper version, just add a few minutes to the baking time

Steps:
- Cream together butter and sugars. Add egg, vanilla and molasses and continue beating until incorporated.
- Stir dry ingredients together in a separate bowl; then add to creamed mixture. Mix together. The dough will be soft; add a little extra flour if you like. Watch the video for tips on this: https://www.youtube.com/watch?v=rM21ykIsqUA.
- Roll the cookie dough into one inch balls. Roll the balls in additional sugar and place on baking sheet. Bake at 375 degrees for 8-10 minutes.
- Let cool on the baking sheet for a couple minutes and remove to wire rack to continue cooling.

Steps:
- Mix first four ingredients; then sift and stir in remaining ingredients.
- Chill dough.
- Roll into balls the size of large walnuts.
- Dip tops in sugar.
- Place sugared side up, 3" apart on greased baking sheet.
- Sprinkle each cookie with 2-3 drops of water to produce a cracked surface.
- Bake until set, not hard, 10-12 minutes, at 375°.
- Yield: 4 doz.

Steps:
- Cream the shortening and the brown sugar. Stir in the egg and molasses and mix well.
- Combine the flour, baking soda, salt, cloves, cinnamon, and ginger. Add the flour mixture to the shortening mixture and mix well. Cover and chill dough for at least 2 to 3 hours.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Roll dough into balls the size of large walnuts. Roll balls in sugar and place 3 inches apart on the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Let cool for one minute before transferring to a wire rack to continue cooling.

This is another one of my Grandma's cookie recipes. She'd serve these along with an assortment of other cookies at Christmas.

- Thoroughly mix wet ingredients together - - shortening, sugar, egg and molasses.
- Blend all dry ingredients together and then stir into the wet ingredients.
- Chill cookie dough for 1 hour.
- Heat oven to 350 degrees.
- Roll dough into balls the size of large walnuts.
- Dip tips of balls into sugar.
- Place, sugared side up, 3" apart on a greased baking sheet.
- Bake 10 to 12 minutes.

Steps:
- Heat oven to 375*.
- Mix brown sugar, shortening, egg, and molasses in a bowl.
- Mix in remaining ingredients except granulated sugar.
- Shape dough by rounded teaspoonfuls into balls, dip in granulated sugar.
- Place balls, sugared sides up, about 3" apart on greased cookie sheet.
- Bake just until set, 10 to 12 mins.
- Immediately remove from cookie sheet.

- Cookies – To the bowl of a stand mixer fitted with the paddle attachment (or use large mixing bowl and hand mixer; or simply whisk together in a large bowl), combine the egg, brown sugar, coconut oil (measure like you’d measure vegetable or olive oil; you need 1/2 cup of liquid-state coconut oil; if your coconut oil is in a solid state, microwave enough so you get 1/2 cup liquid-state coconut oil), molasses, vanilla, and beat on medium-high speed until well-mixed, smooth, and glossy about 4 minutes.
- Stop, scrape down the sides of the bowl, and add the cinnamon, ginger, cloves, nutmeg, optional salt, and beat on medium-high speed until combined and smooth, about 1 minute.
- Stop, scrape down the sides of the bowl, and add the flour, baking soda, and mix until just combined, about 1 minute.
- Using a medium 2-inch cookie scoop, form heaping two tablespoon mounds (I made 17). Place mounds on a large plate, cover with plasticwrap, and refrigerate for at least 3 hours, or up to 5 days, before baking.
