GOMASIO (JAPANESE SESAME SEED CONDIMENT)
A condiment used in Japan much as you and I would use salt. I like this sprinkled on salad, sauteed greens, scrambled egg; but my favorite way is stirring some into my brown rice hot cereal! I use a Japanese suribachi to grind the seed mixture, but you can use a standard pestle and mortar or blender.

- NOTE: To save money, buy the sesame seeds either at the Asian market or in the bulk bins at your grocery store. The seaweed is optional. I always add it but omit it if you wish.
- In 10" clean, dry castiron skillet on medium heat lightly toast the salt and seaweed strip. The salt will turn a subtle greyish color.
- At this point, you can remove the kombu strip, cool slightly, then break up into small pieces. Return the seaweed pieces to the pan.
- Add the sesame seeds and toast about another 6-8 minutes or unti the seeds are light golden. Stir constantly while the seeds toast and watch carefully. If the seeds burn, you have to start over. Reduce heat if necessary.
- Remove pan from heat and allow seed mixture to cool.
- Grind the seeds in batches to the consistency of coarse cornmeal. Specifically this means that about 3/4 of the seeds will be ground and the remaining either partially ground or whole.
- Store in airtight container but DO NOT refrigerate. Use up within a month.

- In a saucepan, combine Rice & Shine and milk. Bring to a low boil, uncovered, on medium high heat. Watch carefully because the casein in the milk will make it boil over and burn rapidly. Simmer on low for five minutes with lid ajar. Stir occasionally to prevent sticking.
- Meanwhile, mash or slice banana in a cereal bowl (slicing gives more texture, but mashing distributes the banana flavor better). Stir brown sugar into banana.
- Pour hot cereal over banana mixture and stir until combined. Add a sprinkle of salt, and stir in more milk if desired. Note: The directions on the box are different than these directions. I have made it both ways and I like this version better.

HOMEMADE BROWN RICE HOT CEREAL
Another Cookgirl original! A nutritious, hearty breakfast cereal much less expensive to make at home instead of buying at the supermarket. I live off this in the cold winter months. Really delicious used in various bread recipes. Also can use basmati, jasmine or regular white rice, but brown is the healthiest.

- In clean, dry skillet (preferably cast iron) toast brown rice on medium heat. Lower heat if rice starts to smoke.
- Toast rice for about 10 minutes, stirring constantly so that grains do not burn. Rice should turn a medium brown. Set aside to cool slightly.
- In blender fitted with steel blade, or in grain mill or food processor grind browned rice to the consistency of medium coarse cornmeal (grainy but not powdered.).
- The grinding process will have to be done in 3/4 cup portions to allow the rice grains to grind effectively.
- To store: Place ground rice cereal in airtight container or "ziploc" bag. The cereal must be kept either refrigerated or frozen. Brown rice goes rancid quickly if stored in cupboard.
- To prepare hot cereal: (1 serving/thick consistency*).
- In small saucepan with 1 cup of rapidly boiling, salted water gradually add 1/3 cup scant of prepared brown rice cereal using a fork to stir well. *For thinner consistency cereal, either increase amount of water, or reduce amount of cereal. Continue to cook rice on high for about 30 seconds breaking up any lumps. Reduce heat until boiling subsides, cover pan tightly and simmer for 10 minutes.
- Serve with your favorite toppings if desired. Season with salt if necessary. My favorite additions are toasted nuts, raisins and cardamom!

VEGAN BROWN RICE BANANA SMOOTHIE
I made this brown rice milk smoothie and it was nothing short of spectacular. OK - so it will be affectionately reserved for the "I don't care about carb overload" trough for future emotional emergencies. But hey - I might just have to pull it out in times of celebration too! It is really that good. Rich, thick, creamy, and delicious. I don't know what more I can say, except blend this up now! You will not be disappointed. And unlike some of the nut smoothies I make - this brown rice smoothie is as cheap as chips!

LOW-FAT, 100% WHOLE GRAIN BANANA MUFFINS
I make this with Hodson Mill Whole Grain Pancake Mix which consists of whole grain wheat flour and whole cornmeal.... and it's cheap too! This is not a cake-y muffin.... it's lightly sweet and grainy. It's great for breakfast... 2 of these and a glass of milk tide me over for hours. I use Smart Balance Butter Blend because it has butter to give it real buttery taste and the Smart Balance has healthful benefits that butter lacks. The best thing about Smart Balance Butter Blend is that it doesn't sacrifice taste! You could choose to use the same amount of olive oil, applesauce, or even non-fat yogurt instead of butter for even more health benefits, but it may sacrifice the taste. You can use any kind of sugar but dark brown sugar has a lower glycemic index than white sugar. Never ever use margarine in these! Margarine is loaded with trans fats (partially hydrogenated oils), even when the label says 0g trans fats on them. If a serving has less than 1g of trans fats, they can legally label them as "0g trans fats".... which means there could be .99g of trans fats per serving. Trans fats consumption leads to the hardening of arteries (atherosclerosis), which can lead to heart disease. Also, do not substitute in Splenda for sugar. Splenda (sucralose) is chlorinated sugar (sucrose), which is highly reactive in the body! This is my first recipe here, I hope you love these muffins!

- Preheat oven to 400 degrees.
- Mix dry ingredients.
- Pour milk onto dry ingredients.
- Combine egg, butter, mashed banana. Add to dry ingredients.
- Combine all ingredients until well blended. Make sure banana is thoroughly mashed.
- Grease 12 muffin pan or line them with muffin cups.
- Divide batter evenly among them.
- Bake 20 - 25. I take mine out right at 20, because I want them to stay moist.
