KATY'S SCALLOPED CORN
This simple recipe came about by necessity. I needed a dish to take to a church supper, didn't have a car available, so I used things I always have on hand. The Big PLUS: This dish can be baked and 'held' awhile before serving!! Very moist and Delicious!!

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease an 8 or 9-inch casserole dish.
- In a small frying pan, saute onion, green pepper, and celery in butter or margarine and vegetable oil. Saute vegetables until tender. Remove vegetables from oil.
- In a medium-size mixing bowl, combine cream style corn, niblet corn, egg and cheese. Mix onion and celery mixture into the corn mixture. Spread into prepared casserole dish.
- Bake for 25 minutes. Remove casserole from oven and sprinkle cracker crumbs onto the top. Return casserole to oven and bake another 10 minutes. Serve hot or warm.

CHERRY PIE

Steps:
- For the crust: Preheat the oven to 425 degrees F. Cut four 12-inch square pieces of parchment or wax paper.
- Mix the flour and salt in a medium bowl. Add the oil and mix with a fork until it begins to come together. Drizzle with the cold water and gently mix. If it looks dry, add additional cold water by the tablespoon. Gather the dough into a ball and divide in half, letting one half be slightly larger than the other (the larger will be your bottom crust).
- Place each ball of dough between 2 sheets of the trimmed parchment paper. Use a rolling pin to roll each ball of dough into a circle that almost reaches the edges of the paper, making a 12-inch diameter (the smaller half will be slightly smaller). As you are rolling, continuously rotate the paper so the crust is even.
- Flip one of the crusts over and peel off the top piece of paper. Transfer the crust to a 9-inch pie pan paper-side up. Gently peel off the remaining sheet of paper and fit the pastry into the pan, leaving an overhanging edge. Using a pastry brush, brush the inside of the crust with the beaten egg.
- For the filling: In a medium saucepan over medium-low heat, combine the cherries, sugar and flour. Bring to a low simmer, stirring often, and cook until the juices release and begin to thicken, 10 to 15 minutes. Transfer the filling to the prepared pie crust. Dot with the butter.
- Peel the paper from the remaining crust and flip onto the top of the cherry pie. Use your fingers or a fork to pinch the crusts together to seal. Cut an X vent in the top with a knife. Brush with the beaten egg.
- Transfer the pie to a baking sheet and bake for about 20 minutes. Check to see if the edge of the crust is getting dark; if so, use aluminum foil to create a guard around the edge of the pie. Continue to bake until the crust is golden brown, 25 to 35 minutes longer.
- Let cool before slicing. Serve with vanilla ice cream.
SCALLOPED CORN

- Position a rack in the top third of the oven and preheat to 325 degrees F. Grease a 2-quart oval gratin or baking dish with 1 tablespoon of the butter.
- Whisk the eggs and half-and-half together in a large bowl. Add the sugar, corn, 1/2 cup of the crushed crackers, 1/2 cup of the Cheddar and 1 teaspoon salt. Pour the mixture into the baking dish, spreading with a spatula or spoon to make an even layer.
- Bake uncovered until the edges are set but the center is still wet, about 35 minutes. Meanwhile, melt the remaining 3 tablespoons butter in a small dish in the microwave, about 30 seconds. Mix the butter into the remaining 1 cup crushed crackers until evenly moistened. Sprinkle the remaining 1/2 cup shredded Cheddar and the buttered crackers over the corn. Continue baking until the edges are brown and the top is set and golden, 20 to 25 minutes more. Remove from the oven and let stand 5 minutes before serving.

This is a recipe that has been used in my husband's family for years. We make it every Thanksgiving and Christmas and there are never any leftovers.

MY MAMA'S SCALLOPED CORN
Although there are a number of other scalloped corn recipes on Zaar, none are just like this one. This recipe is super easy and quick and has fewer ingredients than the others. Only 4 ingredients in this version and only one dish to wash - you mix it up right in the baking dish. My mama always served this at every Thanksgiving and Christmas dinner and we wouldn't have a holiday dinner without it now. You can add some chopped pimento for color - especially if you are serving it for a holiday dinner.

- Grease a 2 quart casserole dish.
- Pour in the 2 cans of cream style corn.
- Slightly beat the 3 eggs and mix into the corn.
- With your hands, crush the crackers right in the sleeve, being careful not to pop open the ends, and pour them into the corn mixture.
- Mix together well.
- Dot the top with butter.

- Sauté onion in butter until golden.
- Blend in flour and seasonings. cook until bubbly. remove from heat.
- Gradually add milk, bring to boil. boil 1 minute stirring constantly.
- Remove from heat & add corn & egg.
- Pour into 1 quart baking dish.
- Top with buttered cracker crumbs. (I butter enough whole crackers to cover the top of the dish then break them up and sprinkle on top).
