KIM'S AWARD WINNING CHILI
I started making this version of chili a little over a year ago and at the urging of a good friend, I entered it into our Chili Cook-Off Contest at work. There were 17 contestants and I won 3rd Place for MY chili! As my friend tells me "It's a good, all-around family recipe" because it's not hot or spicy, so kids will enjoy it...

Steps:
- 1. Follow preparation directions and simmer time on Bear Creek package (adding the 8 oz can of tomato sauce instead of tomato paste as the package calls for).
- 2. While that is simmering, brown ground beef with diced onion and drain fat.
- 3. Once both chili starter package and browned ground beef are ready combine together.
- 4. Add all of the spices, the brown sugar, can of black beans and can of petite diced tomatoes. Stir well to incorporate everything into chili.
- 5. Add pinch of cinnamon (you only need a teeny amount because it will over-power the chili), so be careful!
- 6. Cook for an additional 10-15 minutes if desired, otherwise it's READY to eat!
KIM'S OH-MY CHILI
An upscale version of an old favourite - with white wine, coffee and cocoa adding a more complex flavour. I like mine with lots of taste but not much heat... add more cayenne or chili powder to taste.

Steps:
- Cook onions, garlic and ground beef in a large saucepan until meat is well browned and onions are tender.
- Mix in the diced tomatoes with coffee, wine and broth. Season with maple syrup, salt, chilli powder, cumin, cocoa, oregano and cayenne. Reduce heat to low and simmer for 1 ½ hours.

- In a large stockpot (or dutch oven) over med-high heat sauté ground meat with diced onion and bell pepper until meat is just done. Don’t cook meat too long because it will continue to cook within the chili.
- Add the rest of the ingredients in with the ground meat mixture, including seasonings; stir to combine. The amount of seasoning is up to you. You will most likely want to add seasoning as the chili cooks, tasting as the chili continues to cook.
