KINGS ARM TAVERN SWEET POTATOES

Preparation time does not include cooking and peeling sweet potatoes, since you can also use canned sweet potatoes if you drain the liquid from them. Adapted from the Williamsburg Cookbook.

Steps:

  • Preheat oven to 400 degrees (Fahrenheit) and grease a 1 1/2 quart casserole dish.
  • Mash sweet potatoes and remove as many strings as possible.
  • Save back 2 tablespoons of brown sugar and stir the rest of the brown sugar into sweet potatoes, along with the rest of the ingredients.
  • Pour into prepared dish and sprinkle the 2 tablespoons brown sugar on top.
  • Bake at 400 degrees for 30 minutes.
  • Best if served hot.

Steps:

  • Preheat oven to 400 degrees.
  • Grease 1.5 quart casserole dish.
  • Cook sweet potatoes in boiling salted water until soft when pierced with a two pronged fork.
  • Drain, peel, and mash potatoes.
  • Add remaining ingredients, except 2 tablespoons brown sugar.
  • Mix well.
  • Spoon into greased casserole dish and sprinkle remaining brown sugar on top.
  • Bake for 30 minutes.

BARBECUE SWEET POTATO CHIPS

I'm not a big fan of fried foods, but I do love sweet potatoes and this recipe caught my eye. For a treat, try it! Slice the sweet potatoes as thinly as possible to decrease fry time and increase crispness. Slicing the sweet potatoes with a mandoline makes for wafer-thin and uniform rounds. But you can also use a chef's knife to slice the potatoes. Adapted from Serious Eats. I believe they got this from Marvin Gapultos who is the author of the Filipino food blog, Burnt Lumpia.

Barbecue Sweet Potato Chips image

Steps:

  • Combine the spices in a small bowl and set aside.
  • Pour one inch of oil into a large dutch oven or heavy pot over moderately high heat. Heat the oil until it reaches 375°F on a deep-fry thermometer. Adjust flame to maintain temperature(if using gas stove).
  • Working in batches, place the sweet potatoes in the hot oil, occasionally flipping and moving the slices with a slotted spoon or a wire mesh spider. Fry the potatoes until the edges curl and the potatoes become golden brown and crisp, 3 to 4 minutes total. Transfer the fried potatoes to a baking sheet lined with paper towels and immediately sprinkle with some of the spice mix.
  • When all of the chips are fried, transfer them to a large bowl or serving platter and sprinkle on any remaining spice mix. Serve immediately.

  • Preheat oven to 350 degrees. Grease a 1 1/2 quart casserole. Cook sweet potatoes in boiling salted water until done; drain, peel, and cut into large chunks (about 1" square). Put into the casserole. Mix all of the remaining ingredients. Pour the liquid ingredients over the sweet potatoes. Bake for 30 minutes.

3 lbs. sweet potatoes
3/4 c. light brown sugar, packed, divided
3 T. butter
1/2 t. cinnamon
1/2 t. nutmeg
1/4 t. salt
1 can evaporated milk

Roasted Sweet Potatoes With Macadamia Nuts image

Steps:

  • Preheat oven to 350°F
  • Spread macadamia nuts on a baking sheet and toast in the oven for 5 to 8 minutes, until fragrant and lightly browned.
  • Remove from oven, cool and chop coarsely.
  • Increase oven temperature to 400°F.
  • Oil a baking dish. Cut the sweet potatoes lengthwise into wedges and toss them in a tablespoon of olive oil.
  • Place potatoes in the baking dish and season with salt and pepper. Bake for 45 to 60 minutes, stirring occasionally, until tender.
  • When potatoes are done, remove from oven and let cool for a few minutes.
  • Transfer to a serving platter.
  • Whisk together the remaining oil with the vinegar, maple syrup and mustard.
  • Drizzle over the sweet potatoes and garnish with toasted macadamia nuts.
