BASIC FORMULA FOR GRAVY

You don't need a recipe when you have this formula. The fat can be crisco, butter, oil, or the fat from your pan drippings. The liquid can be water, broth, milk, the juice from the pan drippings or any flavorful liquid. When I make pan gravy, I pour all of the drippings into a shallow bowl and wait for the grease to rise to the top, so you can seperate the fat from the liquid for measurements. Pan gravy is best made in the pan that the meat was cooked in. All of that brown stuck on stuff adds flavor and gives gravy its golden color. So no more gravy mixes, or heaven forbid, canned gravy for you!

Basic Formula for Gravy image

Steps:

  • In pan, measure and heat fat.
  • Wisk in flour.
  • Cook on low to medium heat until it starts to color. (This is called rue). Wisk constantly.
  • When flour darkens to desired color, slowly wisk in measured liquid.
  • Cook until desired thickness.
  • Season to taste.
  • You can add kitchen boquet or gravy master for added color.

2 tablespoons fat
2 tablespoons flour
2 cups broth (or liquid)
salt and pepper

KITTENCAL'S EASY NO-FAIL MAKE ANYTIME TURKEY GRAVY

I have been using this recipe for many years, my family loves this gravy and I have served it to dinner guests over the holidays and always receive rave reviews! --- you don't need to make this gravy using all pan drippings, if you do not have 4 cups of drippings you may mix with chicken broth to make the 4 cups, or it may be made with only chicken broth, please see note on the bottom of the recipe--- this may be made slightly ahead and kept uncovered on top of the stove until ready to serve, just whisk before using If you have any left over this gravy freezes very well or you may reduce all ingredients down to half and for a thinner gravy reduce flour by 1 tablespoon --- also see my recipe#314890 for more of my recipes visit www.kittencalskitchen.com

Kittencal's Easy No-Fail Make Anytime Turkey Gravy image

Steps:

  • Drain the pan drippings for the roasted turkey through a fine strainer.
  • Let sit and then remove any fat from the top of the drippings.
  • Add in chicken broth or water to make 4 cups if necessary.
  • In a medium saucepan, melt margarine or butter.
  • Add in lots of black pepper.
  • Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes over low heat.
  • Slowly add in the 4 cups turkey broth/drippings; whisk constantly over medium-low heat until bubbly and thickened (about 3 minutes).
  • Use right away or keep warm over lowest heat setting, whisk again before serving.
  • **OPTIONS** to make this gravy using all chicken broth prepare as directed using 4 cups low sodium chicken broth and 1 tablespoon chicken boullion powder ---- or you may add in low sodium chicken broth omitting bouillon powder to pan drippings to make up 4 cups.

1/2 teaspoon black pepper (more is better, I use freshly ground pepper)
4 cups pan drippings (or see options below the recipe)

LAZY MAN'S GRAVY (GLUTEN FREE)

A simple sauce that can be used for anything and completely tweaked with according to taste. You can substitute all or some of the stock with drippings from the pan if you are making a turkey, roast, etc. Great over french fries!

Lazy Man's Gravy (Gluten Free) image

Steps:

  • In a saucepan over medium-high heat, melt the butter.
  • Whisk in the cornstarch and continue to cook for one minute.
  • Add the stock gradually, whisking the entire time to avoid lumps.
  • Reduce heat and cook over medium until thickened, stirring constantly.
  • Taste test and add seasonings according to personal taste. Salt, pepper and thyme are suggested seasonings.

2 tablespoons margarine
3 tablespoons cornstarch
2 cups chicken stock (gluten free) or 2 cups beef stock (gluten free)

EASY SOUTHERN TURKEY GRAVY

This gravy comes out perfect every time. You will love how easy it is to make and everyone loves it. It's the cream of chicken soup that makes it special but the poultry seasoning gives it that roasted turkey flavor. Creamy and never lumpy. It's especially great when you are roasting a skinless turkey breast. I baked my turkey breast in chicken broth to get some additional flavor in the gravy.

Easy Southern Turkey Gravy image

Steps:

  • 1. Bring the turkey stock to a boil in a large saucepan. Stir in the cream of chicken soup and season with the poultry seasoning, salt and pepper.
  • 2. Reduce heat to low and let simmer.
  • 3. Warm the milk in the microwave for about 30 seconds and whisk in the flour until there are no lumps.
  • 4. Bring the stock up to a boil.
  • 5. Gradually stir in the milk mixture stirring constantly for about a minute or until it's thickened.

Really Good Chicken or Turkey Gravy image

Steps:

  • Place a medium-sized sauce pan over medium heat with the butter. Once the butter has melted, add the flour to make a roux. Cook, stirring constantly, for about 2-3 minutes, until lightly golden in color.
  • While roux is cooking, place the roasting pan that you cooked your poultry in on a burner over medium-high heat. Once the pan gets hot, add the wine and scrape up all the bits on the bottom of the pan with a wooden spoon. Add the bits to the roux along with the stock and season with salt and freshly ground black pepper.
  • When ready to serve, beat an egg yolk in a small bowl with a ladle of the sauce.
  • Pour the egg yolk mixture back into the pot of sauce. It will make a glossy, more stable gravy.

This is not a fancy beef gravy and I am not claiming it to be the best, but for the ease of this recipe it's sure a great gravy that can be used for many recipes --- my favorite way to use this gravy is prepare as directed then add in slices of cooked leftover beef roast, steak or cooked meatballs to hot gravy, then serve on toasted buns with mashed potatoes--- the amount of flour listed will give you a thick gravy if you prefer a thinner gravy reduce the flour by 1 to 1-1/2 tablespoons --- do not add any salt if desired it may be added in at the end of cooking --- also see my recipe#145064

Steps:

  • In a saucepan over medium-high heat melt butter or margarine until bubbly (do not brown).
  • Add in the black pepper, garlic powder (if using) and flour, then whisk for 1 minute.
  • Slowly add in the beef broth and beef bouillon powder (or beef broth mixed with pan drippings) stir over low heat until smooth, thickened and bubbly about 3 minutes).

No-Fat Gravy image

Steps:

  • In a large frying pan, add broth, mushrooms and liquid and bring to boil.
  • Add pepper, garlic powder, chicken soup base, soy sauce and Worcestershire sauce, stir to blend.
  • While still at boil, add potato flakes stirring constantly until gravy thickens to a desired consistency.
  • Use additional instant potato flakes if gravy is too thin.
  • If gravy gets too thick, add small amounts of water.
  • Adjust seasonings to taste.
  • If you desire a brown color, add a few drops of (Bovril, beef concentrate).
  • This gravy is excellent with roasts or chicken.

Steps:

  • Heat the pan drippings over medium heat.
  • Whisk in flour and cook until lightly golden brown (about 3-4 minutes, the flour must be light brown!).
  • Add in black pepper and garlic powder; then add in the broth and whisk until smooth; bring to a simmer, then slowly whisk in the cream.
