KNOCK YOUR SOCKS OFF CHICKEN

Every time I make this I'm asked for the recipe. It's really a "get your socks knocked off" dish. NO LIE! Cooking time does not include marinating.

Knock Your Socks off Chicken image

Steps:

  • Marinate chicken 2-3 hours in white wine, covered.
  • Remove chicken and save marinade.
  • Sauté chicken in butter until golden brown.
  • Remove chicken and set aside.
  • Add onion and garlic to skillet.
  • Sauté 2 minutes, then sprinkle with flour.
  • Cook and stir for 2 more minutes.
  • Add reserved marinade.
  • Put chicken back in the skillet and add salt, pepper, paprika, basil and parsley.
  • Cover and simmer 30-35 minutes.
  • Remove chicken and place on a serving platter.
  • Mix together half and half, egg yolk and 2-3 tablespoons sauce from the skillet.
  • To skillet add the sliced mushrooms and the half and half mixture.
  • Cook and stir to thicken sauce.
  • Adjust seasoning to taste.
  • Pour over chicken, serve.

1 cup dry white wine
2 tablespoons butter

1 teaspoon flour

1 lb fresh mushrooms, sliced
1/4 cup half-and-half
1 egg yolk, beaten

QUICK CHICKEN COUSCOUS

Take a break from pasta, rice, and potatoes with this quick chicken couscous bowl. Made with chicken breast (or thighs, or even leftover chicken!) and diced veggies of your choice, it's an impressive meal that takes just minutes to make once all the ingredients are prepped. The chicken is moist and tender, the couscous is light yet satisfying, and the veggies add color, flavor, and texture. It can be eaten at any temperature and would be perfect to pack for a picnic.

Quick Chicken Couscous image

Steps:

  • Place couscous in a heat-proof mixing bowl. Add salt, pepper, cayenne, and olive oil; stir with a spoon until all couscous is coated with oil. Level off to smooth the top and set aside.
  • Season chicken on both sides with salt.
  • Heat olive oil in a saucepan over high heat. Add chicken and sear for 2 to 3 minutes on one side. Flip and add onions. Sear chicken on second side, while sauteing onions at the same time, for 2 to 3 minutes.
  • Remove chicken to a plate and let cool for a few minutes. Cut chicken into 1/2-inch cubes and return to the saucepan.
  • Add chicken broth, zucchini, green beans, bell pepper, green onions, paprika, and turmeric to the saucepan. Place over high heat. As soon as it boils, remove from the heat and carefully dump it on top of the couscous; do not stir. Immediately wrap bowl tightly with foil and set a timer for 5 minutes.
  • When timer goes off, unwrap foil and toss in parsley. Stir to combine ingredients. Taste and adjust for salt.
  • Spoon couscous onto serving plate and garnish with feta cheese, chili flakes, and parsley and a drizzle of olive oil.

Steps:

  • In a mixing bowl whip cream cheese with chicken stock, salt, garlic, mustard and wine until incorporated. Place, chicken and sausage in the bottom of your crock pot. Place onions on top. Pour cream cheese mixture over the top. Cover and place on high for 4 hours or low for 5-6 hours, checking it occasionally to make sure it's not thickening too much. If it is, add more chicken stock or wine. When you are ready to serve, you can place the meal in a baking dish and pop it under the broiler for a couple of minutes for some extra color. (this is optional, but I highly recommend it!) Salt and pepper to taste, serve over rice, quinoa, or pasta. ** If your sauce seems thinner than pictured, you can always remove the lid from your crockpot the last hour of cooking.
