Steps:
- Soak mushrooms in cold water for 20 minutes. Drain and cut into thin strips.
- Cook noodles in boiling water for 10 minutes.
- Drain and rinse in cold water, then cut into 4-5" length.
- Mix sesame oil, soy sauce, sugar, 2 teaspoons, sesame seeds, rice wine, garlic, and pepper in a bowl.
- Add half of mixture to sirloin in another bowl; mix and set aside.
- Reserve other half of sauce.
- Heat 1 teaspoon canola oil in skillet or wok over medium-high heat and saute cabbage, onion, carrot, and onions stirring frequently for about 10 minutes.
- Add spinach and saute for 1 additional minute.
- Add mushrooms and noodles and remove from heat.
- Mix well and put in serving bowl; set aside.
- Heat remaining canola oil in skillet, add sirloin and cook until done.
- Add to vegetables and noodles.
- Add reserved sauce and mix well.
- Serve.

- In a large bowl, combine 1 tablespoon soy sauce, sesame oil, green onions, garlic, sesame seeds, 1 teaspoon sugar, and 1/4 teaspoon pepper. Stir in sliced beef, and marinate at room temperature for 15 minutes.
- Heat wok or large skillet over medium-high heat, then drizzle with oil. Cook beef until evenly brown. Stir in carrots, bamboo shoots, napa cabbage, and spinach. Add cellophane noodles, 2 tablespoons soy sauce, 1 tablespoon sugar, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Reduce heat to medium, and cook until heated through.

Steps:
- Brown meat in wok; crumble and cook until done; set aside.
- Soak noodles in very hot water for 5-10 minutes; cut into 3-4 inch lengths.
- Cook spinach according to package directions; drain; rinse in cold water and drain again, squeezing dry.
- In a wok over med-high heat, stir-fry garlic, zucchini, onions, green onions, and carrots in small amount of oil until crisp-tender.
- Stir in meat, noodles, spinach, and straw mushrooms.
- Add sesame seeds, sesame oil, soy sauce, and sugar, mixing well.
- Heat through and serve.

BEEF & VEGETABLES
I was looking for a good way to use up some tough steak I had accidentally bought. I used the standard spices used in most Moroccan dishes & added some vegetables. Simmering the meat for a long time got rid of the toughness. I served this mixture over rice & everyone loved it.

Steps:
- Heat the olive oil in a large pan then add the beef & onions. Cook the beef until all the sides are brown.
- Add enough water to the pan to cover the beef. Stir in all the other ingredients except for the vegetables. Bring to a boil, then reduce heat to medium, cover & simmer for 60 minutes (adding more water if needed).
- Once the beef is tender add the vegetables to the sauce. Cover with the lid & simmer for another 10-15 minutes. The mixture is done once the vegetables are soft.
- Serve over rice or couscous.
- Note: I used zucchini, cauliflower, carrots, green peppers, & parsnip as my vegetables.

I am always looking for healthier ways of cooking for my family. This is one recipe that I have made and frozen for those hectic days. Originally found this one the Weight Watchers Site and tweaked it to my family's taste. 7 Points/6 Servings (Can be prepared and frozen for OMC)

- Preheat oven to 500ºF.
- Coat a baking sheet with cooking spray and spread tomatoes and zucchini over sheet. Roast vegetables for 10 to 12 minutes.
- Meanhwile, in a large, nonstick skillet, sauté beef, onion and garlic until beef is browned.
- Stir in tomato sauce and bring to a simmer.
- Spread beef mixture in a 9x9 baking dish and top with roasted vegetables.
- Reduce oven temperature to 350ºF.
- Whisk together cottage cheese, egg yolk, cheddar cheese, herbs, salt and pepper in a medium bowl.
- Spoon over roasted vegetables and smooth with a rubber spatula.
- Bake until very hot and bubbling around edges, about 35 minutes.
- Cut into six equal pieces and serve.
- (Note: If preparing casserole in advance and freezing it, make sure to thaw it completely in the refrigerator before baking it. Increase the baking time by 5 to 10 minutes.).
- Flavor Booster: To give this dish an Italian accent, substitute fat-free ricotta cheese for cottage cheese and use 1/4 cup grated Parmesan cheese in place of the cheddar. Sprinkle with 2 tablespoons minced fresh basil just before serving.
