KOREAN GRILLED CHICKEN

Steps:
- Whisk together the soy, vinegar, honey, chili paste, ginger and garlic in a bowl and divide the mixture in half. Add 1 half to a large baking dish, then add the chicken, turning to coat. Cover and let the meat marinate in the refrigerator for at least 4 hours or up to 8 hours. Add the green onions, sesame oil, black pepper and sesame seeds to the remaining half of the mixture. Reserve it as a dipping sauce for the finished chicken.
- Light a grill, making sure to include a zone of indirect heat.
- Remove the chicken from the marinade and put it over the charcoal, skin side down. Grill until the skin is golden brown and crisp, about 10 minutes. Relocate the chicken to the indirect heat zone, lower the cover and grill until cooked through. Remove the chicken from the grill to a cutting board and carve. Arrange the chicken on a serving platter and serve wrapped in tortillas, if desired, with dipping sauce on the side.
CHICKEN PATTIES
Steps:
- In a medium saute pan over medium heat add, 1-ounce oil and all raw vegetables and saute until translucent. Remove and cool.
- Add veggies to raw chicken and mix thoroughly. Add all dry ingredients and egg. Thoroughly mix all ingredients and form into 4 patties. Cover and refrigerate for 30 minutes.
- In same saute pan add remaining 1-ounce olive oil, and cook patties 2 to 3 minutes per side.
- Serve with ketchup and mustard on toasted sesame buns with lettuce and tomato.

CHICKEN PATTIES
I had a craving for a chicken burger and didn't have any on hand so I came up with this. The Italian dressing adds a lot to the flavor. I like to use the entire envelope but you might prefer to only use 2 teaspoons. They are also great with ranch dressing mix. I have made them both ways. I usually make a big batch of these and freeze them for quick lunches and snacks. I make smaller patties to eat on rolls but you can make them bigger to be used with hamburger buns and serve them with lettuce and tomato.

- Make the slaw by combining all the ingredients together. Taste and add more chilli powder, if you like. Chill in the fridge.
- To make the sauce, put all the ingredients in a saucepan and simmer gently until syrupy. Take off the heat and set aside.
- Cut away any fatty excess from the chicken thighs, then season with salt, pepper and the grated ginger. Toss the chicken with the cornflour until completely coated.
- Heat about 2cm of vegetable oil in a large frying pan. Fry the chicken thighs for 4-5 mins each side until crisp. Remove from the oil onto kitchen paper and leave to cool slightly for 2 mins. Then re-fry in the hot oil until ultra-crisp and you can hear it crackle. Remove to kitchen paper to drain.
- Reheat the sauce. Build your burgers by placing some lettuce and kimchi slaw on the base of a bun, top with the crispy chicken and drizzle over the sticky sauce.

- Toss the chicken in the soy sauce, sesame oil and ginger. Thread each thigh on two long metal skewers, so that each skewer pierces one side of the thigh. Keep threading the chicken, making sure it's packed onto the skewers tightly. Chill until you're ready to cook. Mix the ingredients for the glaze.
- Heat the BBQ. If using a coal BBQ, wait for the coals to turn ashen before you start cooking. Cook the kebab for 5-8 mins on each side (depending on the heat). Once nicely charred but not fully cooked through, start painting on the glaze. The honey will catch if cooked for too long - the key to nice sticky chicken is applying the glaze in layers, turning the kebab often.
- Once the glaze has been used up and the chicken is cooked through (it'll take about 20 mins in total), transfer to a plate and leave to cool for 5 mins before serving scattered with spring onions.

- Heat oven to 400°F.
- Combine sugar, oil, and garlic in a food processor, and pulse to grind the garlic.
- Add soy sauce, chili sauce (if using), salt, and chicken. Process until the chicken is finely ground.
- Divide the chicken mixture into 20 equal parts, and form each into a small patty. Wet hands will make this less messy.
- Heat a large non-stick skillet over medium heat.
- Add half of the patties, and cook about 4 minutes, flipping the patties halfway through. They should be golden brown, but not cooked through.
- Place the patties on a sheet pan coated with cooking spray, and repeat with the remaining patties.
- Bake 5 to 10 minutes until cooked through. (Check after 5 minutes).
- Note: Since the chicken mix is so messy to work with, you can use two spoons to form the patties directly in the hot pan. Use one spoon to scoop some mix, then use the second to slide the mix off the spoon into the pan. Pat the patty into the shape you want, then move on to the next one.

- In a food processor or high speed blender, add the ground chicken, green onion, garlic, ginger, sesame salt, sesame oil, salt, soy sauce and red pepper. Pulse to grind everything together then blend until mix well together.
- Divide the mixture into 6 balls. On an oiled cutting board or wax paper, flatten each ball into a circular patty. Using a knife, cross hatch each patty from side to side.
- Broil the patties until fully cooked, Grill the patties until fully cooked or pan fry the patties until fully cooked. The patties should be golden brown when fully cooked.

I make tuna patties similar to this all the time and had never thought of using chicken until I saw this recipe in on old TOH. It's great for using up leftover chicken. Sometimes it's hard to keep the patties from falling apart, but if they do I just eat them in a bowl with whatever topping I feel like. Especially love to eat these with recipe#257925.

This is a recipe from one of Madhur Jaffrey's books. I was looking for a different way to get my husband to eat lean meats and this worked (even though he did still put it on a bun). I served it with rice and Korean dipping sauce and it was yummy--no leftovers and even the kids ate some!!!!!

- Cut the scallions crosswise into thin rounds, including some of the green. Peel and mince the garlic and finely grate the ginger.
- Put the chicken in a bowl and mix with the scallion, garlic, ginger, sesame seeds, sesame oil, soy sauce, pepper, and chili powder.
- Shape the mixture into 6 patties.
- Lightly oil a non-stick frying pan and cook until done, turning once. Recipe states these can also be grilled.
- Serve with Korean dipping sauce.
- NOTE: My patties were a bit soft so I did add a small amount of bread crumbs to help them hold their shape.

- Put the garlic, ginger and spring onions into a food processor and pulse until finely chopped. Add the chicken, coriander, fish sauce and seasoning, and pulse again until well combined. Use wet hands to shape the mixture into 12 patties.
- Bring a large saucepan of water to the boil and cook the noodles following pack instructions. Meanwhile, heat 2 tbsp of the oil in a large pan and fry the patties for 4 mins on each side until cooked through. Remove from the pan, cover and keep warm. Drain the noodles.
- Heat the remaining oil in the pan and add the vegetables. Cook over a high heat for 2-3 mins, then add the noodles and soy sauce, stir-frying for a few mins to heat everything through. Serve the noodles and chicken patties with chilli sauce.
