KOREAN GINGER TEA

From koreanrecipes.org.If spicy is not your thing,don't boil it for that long.Just a little simmer to get it just the way you like it.Koreans eat very spicy food so I'm not surprised by boiling it for 25-30 minutes.Even though I love hot food,for me even the 15 minutes was too much.I suggest to taste it and turn off the heat when is suites your taste.

Korean Ginger Tea image

Steps:

  • Clean the ginger well
  • Rinse the cinnamon in cold water.
  • Thin slice the ginger.
  • Put the ginger, cinnamon, and water into a pot.
  • Boil it on medium (or low) heat for about 25-30 minutes.
  • Sieve the ginger and cinnamon. (Use a white straining cloth if you can, to catch the small dirt from the cinnamon).
  • Serve it in a tea cup. (You can also add some pine nuts and honey).

4 -5 pine nuts (Optional (just before you serve the tea)
1 teaspoon honey

Chilled Cinnamon-Ginger Tea (Soojong Gwa) image

Steps:

  • Pour the water into a large pot. Add the cinnamon and ginger and bring to a boil. Reduce the heat and simmer for about 30 minutes.
  • Remove from the heat and carefully remove the cinnamon and ginger. Add the brown sugar and stir until completely dissolved. Let cool, then refrigerate for several hours (preferably overnight) until chilled.
  • If you wish, sprinkle a few pine nuts in each cup before serving.

1 gallon water
3 sticks cinnamon
One 2- to 3-inch piece ginger, sliced
1/4 cup (packed) brown sugar
Pine nuts for garnish (optional)

Found this recipe in Martha Stewart Living Magazine and as I love the taste of ginger decided to try it. Lovely, soothing tea with the fresh taste of ginger and spices of cardamom and fennel. Good for after a heavy dinner or stressful day.

Soothing Ginger Tea image

Steps:

  • Toast cardomom and fennel in a saucepan over medium-high heat for 1 minute.
  • Add water and ginger.
  • Reduce heat and simmer until it reaches the desired strength, 10 to 15 minutes.
  • Remove from heat and stir in honey and mint leaves.
  • Let stand for 5 minutes.
  • Strain into mugs and garnish with mint.
