CHICKEN KOFTA WITH TABOULEH

- Heat grill pan to medium heat.
- Process onion in food processor until finely chopped. Add chicken, dry seasonings, half the cheese and 1/4 cup mint; process just until blended.
- Divide chicken mixture into 8 portions; shape each into 6-inch log on each of 8 wooden skewers, firmly pressing chicken mixture into skewers to secure.
- Grill 12 to 15 min. or until done (165°F) and evenly browned on all sides, turning occasionally. Meanwhile, cook couscous as directed on package, omitting salt.
- Chop remaining mint. Place 1/4 cup mint in medium bowl. Add tomatoes, 1/2 cup cucumbers, dressing and couscous; mix lightly. Spoon onto platter; top with remaining cheese and chicken skewers.
- Mix remaining chopped mint with sour cream and remaining cucumbers. Serve with couscous mixture.

SIMPLE TRAHANA SOUP WITH LEMON AND OLIVE OIL
This is just about the simplest dish to make with trahana, yet I find it incredibly satisfying and refreshing. I like it both hot and cold; it is cooling on a hot summer day and comforting on a cool one (we were in the middle of a bad heat wave when I was testing this week's recipes). The soup is adapted from a recipe in Diane Kochilas's new cookbook: "Ikaria: Lessons on Food, Life, and Longevity From the Greek Island Where People Forget to Die." My favorite herb to use with the soup is fresh dill. If you want to add more ingredients, simmer vegetables of your choice in the broth, or add blanched or steamed vegetables to the soup when you serve it. Broccoli would be great, as would peas, beans, or sugar snap peas.

- In a medium soup pot heat 2 tablespoons of olive oil over medium heat and add trahana. Stir until coated with oil, about 1 minute. Add water or stock and bring to a boil. Add salt and pepper to taste, reduce the heat and simmer, stirring often, until trahana is tender and nutty tasting and the broth slightly thickened, 15 to 20 minutes if using home-made bulgur trahana (if you use semolina or flour trahana the time will only be 8 to 12 minutes and the mixture will be more like a porridge).
- Remove from heat and stir in lemon juice. Spoon into bowls and top with a drizzle of olive oil and a tablespoon of crumbled feta. Garnish with plain yogurt if desired and chopped fresh herbs such as mint, parsley or dill.

CHICKEN SOUP WITH TRAHANA (HOMEMADE DRIED PASTA)
Steps:
- Heat a little olive oil in a pot and saute the onions and garlic. Cook until onions are translucent. Add into chicken broth and bring to a boil. Add trahana and cook until tender. Season with salt and pepper. Serve with garlic toast.
- Combine in a large bowl, the milk, yogurt, and lemon. Cover it and let stand overnight to sour. Next day, in large pot mix the bulgur, flour, and semolina in a bowl and blend in the soured milk-yogurt mixture and eggs. Bring to a boil. Reduce the heat and simmer for 10 minutes, stirring with a wooden spoon. Season with salt and pepper. Let sit for 20 minutes. Place large spoonfuls of the mixture on a baking sheet and place in an oven preheated to 150 degrees and let dry for 8 hours. When dry, place in a food processor and pulse to break into pebbles. Store in jars in a dry cool place. Use like rice and pasta and in soups.
TRAHANA WITH MUSHROOMS
When trahana is cooked in broth, the broth thickens slightly, as it does when you make risotto with Arborio rice. I make this savory, comforting mixture of mushrooms and trahana the same way I make risotto, adding the broth gradually and stirring vigorously from time to time. You may not need to use all of the broth but it is good to have this much just in case. If you make it ahead and reheat, you will want to add some broth, so don't throw out what you don't use.

- Place dried mushrooms in a bowl or in a pyrex measuring cup and pour on 3 cups boiling water. Let sit for 30 minutes. Line a strainer with cheesecloth or with a double thickness of paper towels, place it over a bowl and drain mushrooms. Squeeze mushrooms over the strainer to extract all the liquid, then rinse them in several changes of water to remove sand. Chop coarsely and set aside. Combine mushroom soaking liquid with additional vegetable or chicken stock to make 7 cups. Add salt to taste if stock is not already seasoned. Transfer to a saucepan and bring to a simmer.
- Heat one tablespoon of oil over medium heat in a large heavy skillet or wide saucepan and add onion. Cook, stirring, until just tender, about 5 minutes, and add dried and fresh mushrooms. Cook, stirring, until mushrooms begin to release liquid, about 3 minutes. Add garlic, thyme and a generous pinch of salt. Cook, stirring, until mushroom liquid has just about evaporated, and add the remaining oil and the trahana. Cook, stirring, until trahana is coated with oil.
- Stir in wine and cook over medium heat, stirring, until wine is no longer visible in the pan. Stir in a ladleful or two of simmering stock, enough to just cover trahana. The stock should bubble slowly. Cook, stirring often, until it is just about absorbed. Add another ladleful of stock and continue to cook in this fashion, not too fast and not too slowly, adding more stock when trahana is almost dry, for 15 to 20 minutes, or until trahana is tender. Taste and season with salt and pepper.
- Add another small ladleful of stock to the trahana. Stir in parsley and Parmesan if using. The trahana should be creamy. Serve at once in wide bowls.
