KUNG PAO SNOW PEAS

Stir-frying retains the sweetness and crunch of these low-calorie snow peas. A blend of soy sauce, ginger, chiles and sesame oil, store-bought kung pao sauce adds heat and flavor to this dish without adding a lot of fat.

Steps:

  • Heat a wok or large skillet over high heat and add the oil. Add the onions and stir-fry until just wilted, about 30 seconds. Add the snow peas and stir-fry until nearly crisp-tender, about 2 minutes more. Add the sauce and stir-fry to coat, about 1 minute.
  • Transfer to a platter or large bowl, sprinkle with the nuts and serve.

1 tablespoon peanut or grapeseed oil
1/2 large sweet onion, such as Vidalia or Maui, thickly sliced
8 ounces snow peas, ends trimmed (about 4 cups)
1/4 cup bottled all-natural kung pao, shiitake soy ginger or other low-sodium stir-fry sauce
2 tablespoons chopped unsalted roasted peanuts or cashews

I have been looking for this recipe for years, and finally found it. I am posting it here for safe keeping. If it is as good as I remember, it will be a five-star recipe. I made this last night, and it was good. My changes are in parenthesis. I would definitely add the hoisin sauce for a little sweetness.

Kung Pao Chicken With Cashews image

Steps:

  • Cooking sauce:In a small bowl, combine 2 tablespoons soy sauce, 1 tablespoon white wine vinegar, 1 tablespoon dry sherry, 3 tablespoons chicken broth, red pepper flakes and 2 teaspoons each sugar and cornstarch. Set aside.
  • In another bowl, combine 1 tablespoon sherry, 1 teaspoon cornstarch, 1/2 teaspoon salt and 1/8 teaspoon white pepper. Add chicken and coat well. Stir in 1 tablespoon peanut oil, and let stand 15 minutes to marinate.
  • Heat wok over medium heat. Add 1 tablespoon peanut oil. Add chile peppers and nuts; stir until peppers begin to char. Remove and set aside. Add remaining 2 tablespoons peanut oil and increase heat to high.
  • Add chicken, stir fry unti chicken is almost done.
  • Add the onions, garlic, chiles and cashews. Stir fry for a minute.
  • Stir cooking sauce and add to wok. Cook, stirring until sauce bubbles and thickens. Serve over steamed rice.

  • Rinse and pat dry with a paper towel.
  • Combine marinade ingredients in a ziplock bag.
  • Add shrimp.
  • Mix well.
  • Let stand 30 minutes.
  • Pat dry with a paper towel.
  • Heat oil in a wok 30 seconds over high heat.
  • Stir-fry garlic until golden, 30 seconds.
  • Add shrimp.
  • Stir-fry about 30 seconds until shrimp are pink.
  • Remove from wok with a slotted spoon, draining well over wok.
  • Add salt and snow peas to oil in wok.
  • Stir-fry until sauce thickens slightly.
  • Add cooked shrimp.
  • Stir-fry to coat shrimp with sauce.
  • Serve hot.
