BEST EVER LAMB CHOPS

My mom just loved a good lamb chop, and this easy recipe was her favorite way to prepare them. I've also grilled these chops with amazing results. -Kim Mundy, Visalia, California

Best Ever Lamb Chops image

Steps:

  • Combine herbs and salt; rub over lamb chops. Cover and refrigerate for 1 hour., Broil 4-6 in. from the heat for 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with mint jelly if desired.

Based on a recipe from Bon Appetit's May 1987 issue in the Too Busy To Cook section, courtesy of Marie Zrallek King, Northridge, California. I confess that I brushed olive oil over the lamb chops before dunking them in the topping, only because the topping looked so scrumptious! DH likes these a lot, BTW!.

Lamb Chops

Steps:

  • Preheat oven to 400°F In medium bowl, combine first 6 ingredients. Coat each chop by pressing mixture onto top and bottom. Wrap each chop in foil. Bake 20 to 25 minutes for medium-rare.
  • Preheat broiler. Open foil; sprinkle paprika over chops. Broil until browned, about 2 to 3 minutes.

  • Let the lamb chops sit at room temperature for 20 minutes. Pat dry and season the lamb chops with salt and pepper on all sides.
  • Heat a large cast iron skillet or other heavy pan on medium-high heat until very hot. Add the olive oil and heat for a minute, then carefully place the lamb chops in the pan, leaving a little space between them.
  • Cook for 3-4 minutes until seared on the bottom side, then flip with tongs and cook another 3-4 minutes on the other side to sear.
  • Reduce the heat to medium-low and add the butter, garlic, rosemary and thyme. Spoon the melted butter, garlic, and herbs over the lamb chops while continuing to cook for about 5 more minutes or until the temperature on a digital meat thermometer inserted into the meaty part of the lamb chops reaches 125 degrees F for medium-rare.
