LAST MINUTE FRUIT SALAD
I had to come up with a last minute salad for a church function and had no time to get to the store to buy ingredients. Luckily, I had lots of fruit in the house and came up with this quick yet colorful and tasty salad. I feel almost silly sharing it, as it is really very easy, but I did get a recipe request and left with a nearly empty bowl. Cook time is actually chilling time.

Steps:
- If you have an egg slicer,us this to slice your berries thinly, otherwise, use a knife to slice into very thin slices.
- Wash kiwfruit and pat dry.
- Using a very sharp knife, slice kiwi thinly- leaving the skin ON.
- Lay each slice of kiwi flat and use the knife point to cut a slit in the ring of skin left on each slice.
- The remaining skin should easily peel off (if it is stubborn, just trace along the outer edge of the slice with your knife)- you'll end up with nice even slices of kiwi.
- In a large decorative serving bowl,gently combine berries, kiwi slices, mandarin oranges, and pineapple chunks- don't stir too hard or you'll crush the fruit.
- Chop cherries and add to the bowl.
- Add just a couple of Tablespoons of each of the the reserved fruit canning juices to taste- not too much, just enough to moisten.
- Add the sugar and gently stir to combine.
- Cover& Chill at least 30 minutes.
- Can be made up to 3 hours in advance- but don't make too early or the fruit will get soggy.

5 MINUTE FLUFF SALAD

- In a serving bowl combine drained oranges, drained pineapple, drained and chopped maraschino cherries & marshmallows. Gently mix. Add Cool Whip and gently fold until combined. Serve immediately.
24 HOUR FRUIT SALAD
This is a wonderful salad that is easily adaptable, and can be served as a salad with a holiday meal or as a dessert. The original recipe called for canned fruit cocktail, but I have modified it from that. I'm also allergic to pineapple, so I either pick it out or substitute more of the other fruits instead. All the fruits are really to taste. I could eat myself sick on this stuff, it is so good.

- The canned fruit needs to be completely dry, so recommend starting this 2 days in advance - draining the fruit overnight on the first day.
- On the day before you need the salad, whip the cream. You can sweeten it with a bit of sugar if desired, but it's not needed.
- Mix the pudding mix and milk together until thick.
- Fold the whipped cream and pudding together.
- Fold the fruits and marshmallows into the cream and pudding mixture.
- Refrigerate overnight.
OVERNIGHT FRUIT SALAD
I don't remember where I originally got this recipe, but I've made it many times beginning mid-1960's. For months I've been searching for the recipe to post it. Then today it showed up in my e-mail from a daily recipe site. I've added to the ingredients and directions. The original recipe called for one can of cherries, so that's what I listed in the ingredients, but I prefer two cans of cherries. Look for Royal Ann or Royal Cherries. If you sub a different kind of cherries or other fruit I have no idea how it will turn out. The original recipe didn't call for bananas. I always use 2 or 3 bananas. Leave out them out if you don't like them. Same for the nuts. Be SURE to make this a minimum of 12 hours before serving - 24 hours is better. The first time I made it was for a family gathering. I tasted it right away - it was terrible. The next day it was great. What a difference a day makes! As you can tell from the ingredients, this is sweet.

- Prepare cooked Dressing:.
- Heat first 6 ingredients just to boiling in 1-quart saucepan over medium heat, stirring constantly.
- Let it cool while you beat the whipping cream.
- Beat whipping cream in chilled medium bowl with electric mixer on high speed until it's stiff.
- Fold a spoonful of the cooled egg mixture into into the whipped cream.
- Fold the rest of the cooled egg mixture into the whipped cream.
- If you add the hot egg mixture all at once into the whipped cream, it will curdle; trust me on this.
- Add fruit& nuts to the dressing.
- Refrigerate at least 12 hours to blend flavors.
- Garnish with Maraschino cherries.
- Garnish with nuts if you choose to use the nuts as a garnish rather than an ingredient, or both as I do.
FIVE MINUTE FRUIT SALAD
Next time you have these three fruits on hand (they go very well together) and five minutes to spare.... try this! The sprinkling of things on each layer brings out the best in each fruit. So refreshing. Chill the fruit beforehand and it will be ready to eat as soon as everything is in the bowl.

- Put the diced honeydew melon in a bowl large enough to hold all the fruit.
- Sprinkle with salt.
- Pour the blueberries on top of the melon.
- Spinkle with 2 teaspoons of sugar, or you can use 2 Splenda packets.
- Slice the banana and put it on top of the blueberries.
- Sprinkle with lime juice.
- Mix it together in the bowl as you eat it with a spoon.

TWENTY FOUR HOUR FRUIT SALAD
This is a fruit salad with a cooked dressing.

- In a medium saucepan, whisk together the egg, lemon juice, butter, sugar and 1 tablespoon of the reserved pineapple juice over low heat. Cook, whisking constantly, until mixture becomes thick. Whisk in poppy seeds. Remove from heat and chill.
- Once dressing is cold, fold in whipped cream, pineapple, orange segments, fruit cocktail and marshmallows. Cover and refrigerate 24 hours. Just before serving, mix in the banana.
